Boozy Stovetop Pears with Yogurt

Amaretto is great if you have it, but, if not, substitute with any other brown liquor and it will work out just fine.

Ingredients

  • 7 tablespoons unsalted butter, divided
  • 2 large pears, peeled, halved, cored
  • 2 tablespoons amaretto liqueur
  • 1 tablespoon pear or other brandy
  • Plain yogurt and crushed amaretti cookies (for serving)

Recipe Preparation

  • Stir brown sugar, salt, 6 Tbsp. butter, and 2 Tbsp. water in a medium skillet over medium heat until smooth. Bring to a boil; add pears, cut side down, and cook, swirling often, until browned, 5–7 minutes. Turn pears and remove skillet from heat (leave flame on). Add amaretto and brandy; tilt skillet toward flame to ignite. Cook, shaking skillet, until flames extinguish, then stir in remaining 1 Tbsp. butter and 2 Tbsp. water until caramel is smooth.

  • Spoon yogurt onto a platter and give it a swoosh to spread it out. Spoon pears and caramel over and serve topped with crushed cookies.

When you need a crowd-pleasing party platter appetizer, here's what to make. (You're welcome!). We deep-fried pasta shells to create crisp scoops&mdashthe perfect vehicles for a creamy and tangy vodka dipping sauce.


Recipe Summary

  • 8 fresh peaches - peeled, pitted and sliced into thin wedges
  • ¼ cup white sugar
  • ¼ cup brown sugar
  • ¼ teaspoon ground cinnamon
  • ⅛ teaspoon ground nutmeg
  • 1 teaspoon fresh lemon juice
  • 2 teaspoons cornstarch
  • 1 cup all-purpose flour
  • ¼ cup white sugar
  • ¼ cup brown sugar
  • 1 teaspoon baking powder
  • ½ teaspoon salt
  • 6 tablespoons unsalted butter, chilled and cut into small pieces
  • ¼ cup boiling water
  • 3 tablespoons white sugar
  • 1 teaspoon ground cinnamon

Preheat oven to 425 degrees F (220 degrees C).

In a large bowl, combine peaches, 1/4 cup white sugar, 1/4 cup brown sugar, 1/4 teaspoon cinnamon, nutmeg, lemon juice, and cornstarch. Toss to coat evenly, and pour into a 2 quart baking dish. Bake in preheated oven for 10 minutes.

Meanwhile, in a large bowl, combine flour, 1/4 cup white sugar, 1/4 cup brown sugar, baking powder, and salt. Blend in butter with your fingertips, or a pastry blender, until mixture resembles coarse meal. Stir in water until just combined.

Remove peaches from oven, and drop spoonfuls of topping over them. Sprinkle entire cobbler with the sugar and cinnamon mixture. Bake until topping is golden, about 30 minutes.

Strawberry Cheese Grahams

These Strawberry Cheese Grahams are my new sweet snack obsession. I love cheesecake and these have a similar flavor profile with no baking and minimal prep. The strawberry topping comes together super quickly on the stovetop and once it’s done you can use it to make these treats all week! The creamy, cheesy layer using The Laughing Cow® Creamy White Cheddar cheese, the crunchy graham cracker base and the sweet, gooey strawberries on top complement each other perfectly. These Strawberry Cheese Grahams are perfect for savoring an indulgent moment by yourself, sharing an afternoon snack with your family, or as a fun party food to serve to friends.

I chose to use The Laughing Cow’s Creamy White Cheddar cheese wedges in this recipe because I love the pairing of strawberries (or any fruit, really) with cheddar cheese. However, these Strawberry Cheese Grahams would also be fantastic using their Light Swiss or Creamy Asiago cheese wedges, so feel free to substitute either if you prefer or have them on hand.

Deep, balanced & sweet

Angel food cake

Angel food cake is light, fluffy, and delicious, and it's incredibly easy to make in an Instant Pot — especially using a boxed mix. The key to this one is to split your boxed mix in half, then prepare your batter accordingly, with halved ingredients. Find a cake pan that will fit inside the Instant Pot, surround it with a water bath to steam rather than bake the cake, and set it to cook for around 30 minutes on high. That's it!

The cake will come out spongy and light, and it's perfect to serve up with any number of toppings. For something extra light, just sprinkle the top with powdered sugar and serve with fresh fruit. Or, dollop on some whipped topping, sprinkle with toasted coconut and chopped pecans. Cut into slices and build an easy trifle with jam, whipped topping, and fruit. Or, stir up some Baileys whipped cream, add some chocolate shavings, and enjoy!

This week, for #SundaySupper the theme is all about simple cocktails for summer.

So imagine my delight when I was shopping at a local market, and there they were, just sitting there all sparkly with bloggerish delight, calling my name, the fruit of the cactus, the fresh prickly pear.

I snatched those things up righteously quick, because as a blogger, it’s what bloggers do. We go ape over special and unusual ingredients.

So I brought those home and easily made them into a syrup of the most astonishingly brilliant magenta color. Just four pears made quite a bit, but I am confident in freezing any extra I won’t use in a couple of weeks, but I doubt it will last that long.

The flavor of it is quite interesting- like mixed berries with a hint of watermelon and bubblegum. So you are looking at this drink thinking it is all girly and stuff. Lightweight. Please do a Facebook live video of yourself when you think you can talk these down. Hahahaha we all want to see that. Ahem.

You might end up like the guy who sat next to us at the pizza parlor up in Dayton tonight- I noticed his volume switch had been broken, and looking at how much craft brew was left in his glass, he should have demurely declined before showering me with an outlandish amount of f-bombs regarding some former female companion of his- all told in earnest to his drinking buddy (and unfortunately the rest of the restaurant as well) but that’s just it with some people. They are afraid they will lose face if they just say they’ve had enough. As for me, I had finished a grapefruit IPA at a local brewery before we went for dinner, so I wimpishly settled for a coke.

One was plenty for me, and that’s fine. If I fall asleep sipping this one before I hit send, you’ll know what happened, that I went all old-lady on you and nodded off. So if you are at home, you can do that, but out there in the world, please drink responsibly. Or old ladies like me will mutter nonsensical things under their breath at you (like I did with drunk pizza dude).

But anyhoo- enjoy. It sho’ is purdy, isn’t it?

Prickly Pear Margarita

  • Servings: 1
  • Time: 1hr 30mins
  • Difficulty: easy

(But where’s the fun in that. )

One serving cocktail there will be a lot of prickly pear syrup extra

Margarita Ingredients:

  • Pink colored hibiscus flower salt (as needed)
  • 1-1/2 ounces 100% agave blanco (white) tequila
  • 1 ounce O3 Dekuyper Orange Liqueur (may sub triple sec)
  • 1/2 ounce fresh lime juice
  • 1 ounce prickly pear syrup
  • lime slice or wedge

Prickly Pear Syrup Ingredients:

(Yield: 36 fluid ounces)

  • 1-1/2 pounds prickly pears
  • 2-1/2 cups water
  • 2-2/3 cups granulated sugar
  • 1/4 cup fresh lime juice
  1. Prepare the syrup: trim cichlids (dark spots where thorns grow) from pears with a knife.
  2. Quarter the fruits and place in a saucepan with 2-1/2 cups water bring to a boil then remove from heat. Cover pan and let sit in the hot water for thirty minutes.
  3. Place contents of saucepan in a food mill and puree, discarding solids.
  4. Filter prickly pear juice through a coffee filter you may have to switch filters as one bogs down, but you don’t want to skip this step.
  5. Place filtered juice in a clean saucepan with the sugar and lime juice, and bring to a boil, whisking until sugar dissolves, then remove from heat and cool.
  6. Refrigerate or freeze until needed.

Make the margarita:

  1. Dip rim of margarita glass in water and then into colored salt.
  2. Shake together tequila, orange liqueur, lime juice and prickly pear syrup in a shaker with ice pour into prepared margarita glass garnish with lime slice and serve.
