An easy to make, delicious and good-looking recipe. It can be made with any kind of jam. This recipe is Spanish and in the country of origin it is called Brazo de gitano, a sweet that is prepared around the winter holidays.

  • 9 tablespoons white flour
  • 9 eggs
  • 200 g sugar
  • 2 cans (300g) natural cream cheese, some fine Delaco cream

  • 300 ml liquid cream
  • 200 ml whipped cream for garnish

RECIPE PREPARATION Roll with jam and cream cheese:

For the leaves, separate the egg whites from the yolks. Whisk the egg whites with a pinch of salt. Then add a tablespoon of sugar and continue beating until it becomes a hard and shiny meringue. The yolks are homogenized. In them add melted and cooled butter and mix just like mayonnaise. Then we start to add flour and milk, until we get a paste. In this we put 2-3 tablespoons of meringue and mix lightly, then incorporate the whole composition of egg whites, mixing with a spatula by turning over until smooth. Divide the composition into two large stove trays lined with baking sheet. Bake at 180 degrees, 10-12 minutes, in the preheated oven. When they are ready, take them out and peel them off the paper. Leave to cool on a grill.

Beat the whipped cream until it hardens. Homogenize the cream cheese and then mix them together for 2 minutes.

Spread the cream on the sheets, put the jam over the cream and roll tightly

Let cool for an hour then garnish with whipped cream, mint and fruit.

Add whipped cream and continue mixing until it becomes frothy and homogeneous.
