cup quick-cooking corn grits (not instant)

1/2

cup shredded white Cheddar cheese (2 oz)

slices (about 2 oz from 6-oz package) Canadian bacon, chopped

tablespoon sliced green onions

Hot sauce, to taste, if desired

    In 2-quart saucepan, heat broth and milk to boiling over medium-high heat.

    Beat in grits with whisk; reduce heat to low. Cook 4 to 5 minutes, stirring occasionally, until thickened. Stir in cheese and Canadian bacon. Divide between 2 serving bowls; top with green onions and hot sauce.

That’s right – it’s the day of the week that I present to you something yummy to make that involves BACON – after all, this is the land of Baconia that I am King of so we do a lot of bacon-ized things around here! Today I have something that some people just have no taste for – don’t make or eat them – but down South, everybody knows about them. What am I talkin’ about.

Bircher Muesli, A Nutritious No-Cook Backpacking Breakfast

  • ½ cup rolled oats (50 g)
  • ½ cup dried grated apples (16 g), equivalent to 1 small apple
  • ⅛ cup dried bananas (10 g), equivalent to ⅓ of a banana
  • ¼ cup dried mixed berries (2-3 grams each)
  • Toppings: walnut pieces, tsp. sugar, pinch cinnamon
  • Optional: 4 Tbsp powdered milk, makes 8 oz.
  • 1½ cup cold water to rehydrate

Pack oats and dried fruit in one Ziploc bag. Pack toppings and milk powder in separate bags.

Combine oats and fruit with 1½ cup cold water in a sealable container such as a thermos food jar. Soak overnight to enjoy muesli for breakfast, or soak it while you walk for an hour or two, if you want to eat it later in the day. When serving, top with walnut pieces, sugar to taste, and a pinch of cinnamon. Add mixed up powdered milk if desired.


How to Cook Delicious Stone-Ground Grits

Grits are usually eaten for breakfast in the South, but they can also be enjoyed fried or as a savory side dish with meat, shrimp, or cheese. Whether you like your grits plain or fancy, these basic cooking instructions for stone-ground grits will ensure they're perfect every time.

The recipe is for stone-ground grits, not instant or fast-cooking grits. This traditional variety of dried hominy absorbs about four times the amount of liquid and is cooked slowly. If you're going to make a larger or smaller batch, be sure to keep the ratio of 1 cup of grits to 4 1/2 cups of water intact. We don't recommend using milk for cooking grits since it can scorch. Feel free to add milk or cream at the end if desired.

Grits can be cooked on the stovetop or in your slow cooker and instructions are included for both methods. You'll also find some creative ways to serve grits along with tasty add-ins that transform this favorite pantry food into a versatile meal option.

Many thanks again to my friend, Roan, at Joyful Always for this delicious recipe. It’s definitely a keeper! This would make a great “date-night-at-home” meal!

We bought some shrimp while we were in Destin and froze them when we got home. I thawed some of these to use for tonight’s supper. They were very tasty!

I love Shrimp and Grits! My favorite restaurant version (to date is the one served at Boure in Oxford.

Leigh and Brendan were in Destin for a conference a couple of the days we were there. They treated us to supper one night at Graffiti’s, located in the Baytown area. Larry and I both ordered the Shrimp and Grits dish, which was delicious! The restaurant’s artwork was neat, too!

The Easy Mandarin Orange Salad was inspired by a salad I ate at Harbor Docks, while we were on vacation. The crisp lettuce, crunchy almonds, sweet oranges and tangy Italian salad dressing all contrast each other nicely. It goes really well with seafood.

I've had two people mention that they have tried the Hush Puppies from Wal-mart, and they like them really well, too! They are pretty good!


Thursday - Shrimp and Grits, Easy Mandarin Orange Salad and Hush Puppies OR *”Leftover Buffet”

*If you have enough leftovers from the week’s previous meals, heat everything and serve it to your family buffet-style.

3 cups chicken broth
1 cup uncooked quick-cooking grits
1/2 teaspoon salt
1/4 teaspoon pepper
2 tablespoons butter
2 cups shredded cheddar cheese
6 slices of bacon
2 lbs. medium shrimp, peeled and deveined
1 tablespoon lemon juice
2 teaspoons Worcestershire sauce
1 tablespoon dried parsley flakes
2 garlic cloves, minced (I use the kind in the jar already chopped)

Bring chicken broth to boil. Stir in grits. Cook, stirring occasionally, 5-7 minutes or until thickened. Remove from heat stir in salt, pepper, butter, and cheese. Set aside and keep warm.
Cook bacon until crisp, set aside to cool then crumble. Cook shrimp in the same pan over medium heat 3 minutes or until almost pink, stirring occasionally. Add lemon juice and next 4 ingredients and cook 3 minutes. Stir in bacon. Spoon grits onto individual plates. Top with shrimp mixture. Serve immediately.
Serves 4-6

Easy Mandarin Orange Salad

1 bag Romaine OR spring mix lettuce
*½ cup toasted slivered almonds
1 can Mandarin oranges, drained
1 bottle Italian salad dressing

Place lettuce on salad plates. Top with drained oranges and toasted almonds. Drizzle with salad dressing.

*To toast almonds, place slivered almonds and 1 tablespoon butter in a microwave-safe pie plate. Microwave on high, stirring every minute until brown, 4 to 5 minutes.

We really like Hush Puppies from Wal-mart. The bag doesn’t have a brand name, not even Great Value. It simply says - Hush Puppies. On the back of the bag, it says they are distributed by Wal-mart. They are really good and a hit with all of us. As Larry says, they are better than many restaurant hush puppies. I just follow the directions on the bag for baking them.
