In a large bowl put warm water, butter, yeast, vanilla essence, salt and sugar, mix.

We then incorporate all the flour and at the end we obtain a firm dough that we leave in the bowl in which it was kneaded, covered with a clean kitchen towel to protect it from the currents.

Leave the dough to rise for an hour, during which time it will double in volume.

Mix 100 gr. soft butter with 1 tablespoon powdered sugar in a bowl.

We line the work table with flour, spread the leavened dough in a thin sheet, grease the sheet with butter rubbed with sugar, then gently pull one of the ends of the dough inwards, so that we have butter in the middle, practically halving the surface of the dough at the beginning.

Cut 1.5cm strips, knit two strips of dough and then shape the pretzels.

Wallpaper two trays with baking paper.

We place the pretzels in the trays, leaving room between them because they will grow when baked.

Grease the pretzels with beaten egg yolk with 2 tablespoons of cold milk, put the trays in the oven for 30-35 minutes, until the pretzels brown nicely.

While the pretzels are in the oven, lightly heat 250 ml of water, when it has a bearable temperature, put the kettle aside and add 6 tablespoons of rapeseed honey. Mix and obtain the syrup with which we will grease the red and hot pretzels just taken out of the oven.

Sprinkle the ground walnuts over them and serve.

We cut each strip once more in two, leaving one end uncut, then we weave (twist) the 2 ends and give it the shape of a pretzel, joining the ends in the center of the strip.

I got 15 pretzels.

Put the obtained pretzels in a tray lined with baking paper, then grease them with the egg yolk spread in the 2 tablespoons of milk.

Put the pan in the preheated oven over medium heat until nicely browned.

While the pretzels are cooking, prepare the syrup: In a kettle, put water with honey and leave it on the fire until the water heats up (not boil), then turn off the heat, stir a little more, until the honey dissolves.

When the pretzels were browned, we poured the syrup obtained over them.

We serve them warm, but if they have cooled we powder them with powdered sugar and serve them with a coffee, a cup of milk.

For starters, I greased the yeast with a teaspoon of sugar, put a tablespoon of flour and a little lukewarm milk, then left it to activate the yeast and begin to leaven. In a bowl I sifted the flour together with the salt and put the sugar.

I made a hole in the middle where I put the yeast. I mixed it with flour and then I added the flavors, the warm milk and finally the melted and cooled butter.

Knead an elastic dough that comes off the walls of the bowl. The whole operation doesn't take long. Depending on the type of flour and moisture, flour or milk may be needed. But the dough should not be too soft. I placed the ball of dough in a bowl, covered it with a clean napkin and left it to rise for about an hour, until it doubled in volume. I turned the dough over on a plate, divided the dough into two parts and spread a rectangular sheet of each. I greased the sheet with half the butter mixed with sugar, I folded the sheet in half, then I cut the strips about 1.5 cm wide, as seen in the picture. I cut each strip in half lengthwise, leaving one end uncut. I braided the two ends and then shaped it into a pretzel. They didn't look good on me, so I'll have to practice again. I got about 16 pretzels, but some were bigger and some smaller. I let it ferment for another 10 minutes, then I greased them with egg yolk mixed with milk and put them in the oven at 200 degrees for 20-25 minutes. Depending on the oven, you can adjust the time or temperature. While they were baking, I prepared the syrup. I mixed the honey with water, lemon juice and heated (without boiling) until the honey melted. I put the syrup over the hot pretzels when I took them out of the oven.


How do we make and model the best pretzels?

The recipe for homemade pretzels is not difficult to make, nor does it take very long, it just requires you to follow some simple steps. First you have to make the dough. It's a soft, supple and very slightly sticky dough. I kneaded it on the robot, but it can be kneaded just as well by hand. It is important to knead it long enough. The modeling of pretzels is not difficult either, and in video recipe I'll show you exactly how to proceed. Their scalding is very important. It doesn't take long, but you shouldn't miss it either. This scalding gives the pretzels the taste and texture of pretzels, just like in our childhood.

However, I admit that these homemade pretzels are not like the ones from my childhood pretzel, but they are 100 times better than the ones from the band ovens. They are easy to make, they are not difficult to knead or shape, they have that texture of pretzel, due to scalding in baking soda and they are fluffy and soft inside. The ones with poppy seeds are my favorites, I don't refuse the ones with sesame or the simple ones, sprinkled only with salt. Whatever your favorites, I recommend this homemade pretzel recipe.
