I made a mayonnaise from 2-3 tablespoons of warm milk, yeast and a tablespoon of flour, which I left aside for 5 minutes to activate the yeast. In a bowl I put the rest of the flour, eggs, oil, sugar. , cinnamon, lemon peel and a pinch of salt, I mixed the ingredients well with a spoon, then I added the mayonnaise, the rest of the milk and I kneaded by hand until the dough began to come off the hand. If it comes out very soft , you can add another 20 gr of flour one at a time while kneading.
I then left the dough to rise in the sun for about an hour. After the dough had risen nicely, I divided it into 2 equal parts, each of the 2 parts of the dough, I kneaded it a little more, then I spread a round sheet from each but not very thin, I cut into slices similar to cakes and filled each slice with a teaspoon of strawberry jam, then I rolled starting from the wider side to the top and placed next to each other the croissants in a shape of cake covered with butter and flour. After the whole form was filled, I greased the croissants with beaten egg on top and let them rise for another 10-15 minutes in the sun, covered with a clean cloth. After this time, I shaped Bake over medium heat, until the croissants are nicely browned and the dough is baked.
A very fluffy dough came out, and the shape of the cake they took gives it the appearance of a Sunday dessert, although as I said it is actually a common dessert.
