Pork with quince
Super recipe, taken from the net with small changes otherwise it is not possible :). Very good combination with sweet and sour taste.
Here is the recipe, portion for 2 people:
400 g pork pulp
1 tablespoon sugar
1 tablespoon flour
paprika, pepper, salt
Cut the meat into strips, season and fry in a little oil. Peel a squash, grate it and slice it. When the juice left by the meat decreases, add the carrot and fill it with water until the meat is covered.
Bring to the boil with a simmered lid.
Make the sauce separately: caramelize the sugar in a saucepan until it turns reddish (be careful not to burn it because it changes the taste of the food) add 1/2 cup of water and let it boil until the caramel dissolves. Separately mix the flour with a tablespoon of water, add to the hot syrup, stirring constantly. The sauce is set aside.
When the meat is ready, prepare the quinces. Try to work quickly because they turn black immediately. Peel a squash, grate it and slice it. Put a little oil in a pan, add the quince slices and fry them for a few minutes on high heat.
In a yena bowl or pan put the meat, then the quince slices and finally the sauce.
Put in the oven over low heat for 30 minutes.
Serve as such or with a potato garnish. I recommend you try it because it has a special taste.

Recipe of the week & # 8211 Overturned cake with caramelized quinces
For the dough (30 cm diameter of the mold):
1 medium egg, 450 g flour, plus for baking, 3.5 g dry yeast, 150 ml milk, 50 ml oil, 2 tablespoons sour cream, 100 g sugar, 38 ml vanilla essence, 1/4 teaspoon salt
50 gr soft butter, 2 teaspoons cinnamon, 100 gr ground nuts, 2 tablespoons raw sugar
For caramelized quinces:
3 medium quinces, 150 gr sugar, 50 gr butter
200 gr cream, a little cinnamon
Method of preparation
Sift the flour into a bowl, make a hole in the middle of it and put a tablespoon of sugar plus dry yeast. Pour a little warm milk, and mix well until the yeast and sugar liquefy, forming a mayonnaise. In another bowl, mix the egg with the salt, then with the rest of the sugar, add the oil, cream and essence and mix. Put this composition over the mayonnaise from the bowl of flour and mix intensely, adding the flour, gradually and the rest of the warm milk. Knead a slightly firm and non-sticky dough, which is left to rest until the caramelized quinces are prepared. Wash the quinces well, wipe and cut into coarse slices. Caramelize the sugar in a double-walled pan, and when it is fluid, add the butter. Stir until the butter melts and blend the caramel, then add the quince slices. Mix well with the caramelized sugar until all is greased with this caramel. Turn the oven to 180 degrees. Line the baking tin with a little soft butter and sprinkle flour on the sides only. Place the quince slices at the base and pour all the caramel over them. Spread the dough on the floured table, in two thin sheets of about 3-4 mm and grease with soft butter. Sprinkle finely ground walnuts over the butter, mixed with the raw sugar and cinnamon. Cut the dough into strips of about 3 cm. Roll the first strip, not very tight, then continue with the second, and the others, making a large roll that is placed over the caramelized quinces in the baking dish. Bake the cake for 40 minutes at 180 degrees. Leave to temper for 5-6 minutes in the baking dish, then turn over on the plate. After it cools completely, decorate with whipped cream and sprinkle a little cinnamon over it.
