Ingredients

  • 2 tablespoons (1/4 stick) butter
  • 1 fennel bulb, trimmed, quartered, cored, thinly sliced crosswise
  • 1/2 teaspoon fennel seeds, crushed
  • 2 1/2 pounds russet potatoes or Yukon Gold potatoes, peeled, cut into 2-inch pieces
  • 1/4 teaspoon (or more) half and half

Recipe Preparation

  • Melt butter in heavy large skillet over medium heat. Add sliced fennel bulb and crushed fennel seeds and stir to coat. Sprinkle with salt and pepper. Reduce heat to low, cover, and cook until fennel is tender but not brown, stirring often, about 20 minutes. DO AHEAD:Can be made 2 hours ahead. Let stand at room temperature.

  • Place potatoes in large saucepan. Cover with cold water and bring to boil. Reduce heat to medium and boil until potatoes are tender, about 15 minutes. Drain. Return potatoes to pan; cook over medium heat until no liquid remains. Mash potatoes.

  • Add 1 cup half and half to fennel mixture and bring to simmer. Working in 2 batches, add fennel mixture to potatoes; stir to combine. Season with salt and pepper. Let stand at room temperature. Rewarm over medium heat, adding more half and half as needed if dry.

Place potatoes in a large saucepan with enough cold water to cover. Place over high heat, and bring to a boil. Reduce heat to simmer, and cook until potatoes are tender when pierced with a fork, about 20 minutes. Drain in a colander, and carefully remove skins. Pass potatoes through a ricer into a large bowl.

Meanwhile, coat a large saute pan with olive-oil cooking spray, and place over medium heat. Add onion, fennel, sugar, salt, and pepper, and saute until onions are tender and caramelized, about 15 minutes. If pan begins to brown before fennel and onion are cooked, add water, 1/4 cup at a time, and continue cooking. Transfer fennel mixture to the bowl of a food processor, add sour cream, and puree until mixture is smooth. Place milk in a small saucepan, and bring to a boil. Whisk milk and sour-cream mixture into potatoes until smooth and fully incorporated. Serve.

Cooking Tips

Always be cautious when blending warm or hot foods as they will expand. It is best to crack the cover a bit and maybe even use a clean towel over the cracked lid. Best advice…allow the product to cool first.

After the potatoes have dried slightly in the pan, rice them or hand mash to desired consistency and add half of the fennel mixture. Blend and continue to add fennel mixture to desired consistency. Taste for seasoning and add salt and pepper.


Mashed Potato Casserole

Fillet of salmon with fennel and potato mash and red wine vinaigrette

For the salmon, mix together the fennel seeds and chopped fennel leaves in a bowl.

Brush each salmon fillet with a little oil, and season well with salt and freshly ground black pepper.

Rub a good coating of the fennel mixture onto the salmon fillets, pressing gently but firmly onto each fillet to ensure the coating sticks.

Place the salmon fillets, coated-side down, onto a lightly oiled baking tray. Place under the grill and cook for 3-4 minutes, depending on the thickness of the fish fillet. Carefully turn the fillets over and grill the coated side of the salmon (the coating will brown and crisp up slightly). Grill for a further 3-4 minutes, or until completely cooked through.

For the vinaigrette, place the red wine and shallots into a small pan over a medium heat and bring to the boil. Lower the heat slightly and simmer until the wine has reduced by half.

Turn the heat down low and whisk in the butter, a little bit at a time. Do not allow this sauce to come to the boil again.

Season, to taste, with the sugar and salt, and keep in a warm place until ready to serve.

For the fennel mash, place the potatoes into a saucepan over a high heat, cover with water and bring to the boil. Reduce the heat and simmer, until cooked, then drain and return to the pan. Mash the potatoes until smooth, then set aside.

Heat a large pan until hot, then add the butter, fennel and fennel seeds and fry gently for about 10-15 minutes, over a low heat, with the lid on, until all the fennel pieces are soft.

Add the cream, increase the heat and bring to the boil. Reduce the heat to a simmer for 4-5 minutes, until the cream has thickened slightly and the fennel is completely cooked.

Transfer the fennel mixture to a food processor and blend to a smooth purée then pour into the pan of mashed potatoes. Stir well and season, to taste, with salt and freshly ground black pepper.

To serve, place a spoonful of the mashed potatoes into the centre of each plate. Top each with a salmon fillet and spoon the vinaigrette around.


  • 50g/1¾oz butter, plus extra for greasing
  • 3 large bulbs fennel
  • 3 onions
  • 600g/1lb 6oz large potatoes, peeled
  • 2 garlic cloves, crushed
  • 50g/1¾oz parmesan cheese, grated (or vegetarian equivalent)

Preheat the oven to 200C/400F/Gas 6 (180 fan). Butter the serving dish.

Trim the tops from the fennel and cut each bulb in half through the root, then cut each half lengthways into three wedges. Cut the onions into six wedges too in a similar way.

Boil the fennel and onions in a large pan of salted water for about five minutes, then add the potatoes and boil for a further five minutes, or until the potatoes and fennel are just tender. Drain well.

Put the 50g/1¾oz butter and the garlic in the same large pan set over a low heat until just melted. Return the potatoes and fennel to the butter, toss until coated then tip into the ovenproof dish. Sprinkle with the parmesan. Bake for 30-40 minutes, or until piping hot.

Recipe Tips

Assemble the dish up to 12 hours ahead and chill in the fridge. It is essential to pre-cook the potatoes and fennel, otherwise they absorb too much butter and you would have to use more, giving an over-rich result and the fennel could be tougher.

I have experimented with various flavours like adding herbs, grated vegetables and the like, but my favourite has been to season the mashed potatoes with crushed fennel seeds.

I have also tried various cooking methods, like deep frying (that I stopped eons ago) and moved on to baking, but did not give me the perfect crust and now finally using a magical product the Philips Air fryer.

Note: If you do not have the airfryer you can also bake it on your Oven. Preheat the oven to 200C and then place the filled croquettes on a greased baking sheet and bake until the top is crusty and golden brown

My review on the air fryer: It took me just about 12 minutes to fry and the croquettes came out beautifully browned and retained it shape too. These have no eggs and just 1/8th teaspoon of oil per croquette that I drizzled half way through the frying process.

Today in our military affected lives I have nothing significant to update.
Since we last spoke I hosted a Zoom meet and greet for a small group of spouses and had a great time. Over the years I have become the person to go first, to continue silent conversations, to volunteer as tribute. I learned that in the realm of public speaking (among others) we are certainly our own worst critics. So in my late 20s I honed in my ability to speak first or the most. If I’m exceptionally poignant, loquacious, yet with brevity – then I feel like I have set the bar. However when I stumble over words, garble phrases, or use filler words – I know that I am putting others at ease because I have lowered the bar. In the end, I haven’t done any form of public speaking to a real-time audience in years, and I don’t think that the gap was perceived in the Zoom.

I have small updates! I finished and published a post about my five favorite routine skincare items, and finally added some photos to the current Outfits of the Day post. I also shared some evergreen posts on Tailwind and Pinterest. If you’re not a blogger you may not be familiar with Tailwind. It’s a publishing service that uses algorithmic magic to queue your content until they are most likely to receive engagement. They also have internal topic-specific groups where users can easily share like content. It is handy and clever, but not worth $100 a year. When you step down from the paid version (like I did) you still have access to the internal groups, but not the automated scheduler. But it’s okay…I never felt like I got my money’s worth in the first place, and I don’t mind spending a few minutes each week to post my own stuff by hand.
Otherwise I am still trying to find more time to write because I my unfinished article pile is higher than I like, and I have a few that I would publish tomorrow if I didn’t need to sleep or be an adult for the next 12 hours…so the struggle continues to find time for me to focus on writing. In the meanwhile I’ve temporarily moved my laptop and modified editorial calendars (one for the blog, one for this podcast) to the dining room table because the space and light are good for me.

I was bowled over. Both quality and quantity surprised me, but it’s a good thing. It sounds goofy and looks hilarious, but we love beetatoes. Simply peel and halve some beets and pressure cook them with peeled and halved potatoes. Drain, mash with milk butter and garlic. They’re sweeter and significantly more magenta that regular mashed potatoes, but they mash well and the Kid likes them!
Which brings me to my recipe revelation. I might make it a point to shoe horn in a recipe here (with photo and full recipe in the show notes) because my recipe retrieval system is apparently changing. I used to load everything into an iPad app (that I still enjoy) and reference it each night, but now I just google what I need and only need the app when the iPad is dead, so I end up googling my questions and writing notes on a post-it note. Unless I’ve written or podcasted about a recipe then it’s super easy for me to pull up and use. So with that in mind, I couldn’t find my mashed potato recipe, so here it is for future reference:

Instant Pot Mashed Potatoes
– 3lbs red potatoes, peeled and halved
– about five cloves garlic, crushed and peeled
– salted water to cover.
Cook on manual high pressure for 8 minutes, then strain and mash with butter, olive oil, and milk.
Finish with salt and pepper.
If making beetatoes, simply add peeled and quartered beets to the potatoes, cover with water and cook like normal. The advantage to cooking and mashing in the Instant Pot’s stainless steel insert is that contact with beet juice is minimized, so staining is only most likely when peeling, cutting, and eating.

Ina Garten’s Twist on Mashed Potatoes is The Perfect Make-Ahead Thanksgiving Side

With Thanksgiving less than a week away, we’re already mentally preparing for all the food we’ll be noshing on. Though we typically indulge in a Turkey meal every year, the great thing about this holiday is that there’s no one side we’re forced to choose from. In fact, this year our fave chefs have gotten even more creative and have gifted us with all of their best Thanksgiving side recipes. Preparing a dinner for your entire family is already not a simple task, but cooking on a day that’s celebrated with a meal? The pressure is on. Luckily, Ina Garten always has our backs and shared the perfect make-ahead Thanksgiving side: Potato Fennel Gratin. This crowd-pleasing crunchy twist on mashed potatoes is sure to lift one weight off your shoulders on a guaranteed hectic day.

Garten shared a snap of her yummy side on her Instagram, writing, “Instead of mashed potatoes, this year I&rsquom making a potato dish with a twist – Potato Fennel Gratin.” It’s a bold choice for Garten to stray away from the traditional mashed potatoes, but we can’t say we’re necessarily mad about it.

The Barefoot Contessa continued her post, “It&rsquos rich and creamy and infused with onions, fennel, and Gruyère cheese &mdash Yum! You can assemble it early in the day and bake it before dinner.”

Hey, any recipe that saves us time in the kitchen automatically has a special place in our hearts.
