  • 500g minced pork

RECIPE PREPARATION Baked meatballs:

Potato and carrot (raw) are put on a small grater, drain well and juice. Crush the garlic, cut the greens into small pieces. Mix all the ingredients (except the breadcrumbs) and season.

Form meatballs (I got 16), put them in breadcrumbs and put them in a tray lined with parchment.

Put in the oven over medium heat for about 45 minutes.

Serve hot with peasant bread and whipped milk.

This time I used hake and a few surimi bars, but you can use any kind of fish and you can give up surimi if you don't like it.

Marinated meatballs, mother-of-pearl recipe, ingredients:

  • 500 grams of minced meat, I prefer leaner meat
  • 100 grams of white bread, without crust
  • 4 cloves of garlic
  • 1 whole egg, pepper
  • 1 tablespoon flour
  • 1 bunch of green parsley
  • 2 tablespoons frying oil

tomato sauce:

  • 1 kg. of fresh, scalded and peeled tomatoes or 500 ml. of thicker tomato broth, or 1 can of 400 grams of tomatoes in mashed broth
  • 1 small onion
  • 1 tablespoon oil
  • 1 bay leaf
  • 1 tablespoon grated sugar
  • salt pepper
  • a few branches of thyme

Preparation of tomato sauce:

1. The first time, I usually make tomato sauce: chop the onion, heat the oil in a saucepan and cook the onion with a pinch of salt from the beginning, so that it melts rather than frying. When the onion has softened, add the diced tomatoes / broth / can of mashed tomatoes, bay leaf and a few sprigs of thyme.


2. Boil everything on low heat for about 10 minutes. Finally, remove the bay leaf and thyme and the sauce can pass through a sieve or can be passed with a hand blender (if desired, some like a more rustic consistency). Adjust the consistency of the sauce by adding a little hot water if necessary, bring it back to the boil and add the sugar, salt and pepper so as to obtain a balanced sour / sweet / salty / spicy taste. Leave the sauce aside until the meatballs are ready.

1. Pass the meat through the mincer (if you have not already bought minced meat) and prepare all the ingredients.

The preparation method is as follows:

Put the lentils in a pot and cover the beans with water, then leave them on the stove over low heat until you notice that they have softened. This process should take about 30 minutes, after which you can drain the lentils. Let it cool and, in the meantime, in 60 ml of olive oil, cook the onion, carrots and celery together with the thyme, garlic and a little salt, until the vegetables change color. Then add the tomato paste, leaving the mixture on the fire for another three minutes. Next, put the chopped mushrooms and leave everything on the fire for another 15-20 minutes, until the mixture decreases. When you get the desired result, turn off the heat and let the vegetables cool, then add them over the cooked lentils earlier.

Now is the time to add eggs or rye flour, depending on your preferences, grated Parmesan cheese, breadcrumbs, freshly chopped parsley and walnuts. Mix everything with a wooden spoon, to obtain a homogeneous composition, then put the mixture in the cold for 25-30 minutes. Meanwhile, preheat the oven to 200 degrees Celsius.

Grease a pan with two tablespoons of olive oil and remove the vegetable mixture from the refrigerator. Using a spoon, take some of the composition and, using both hands, form spheres, which you then place in the tray. Leave an appreciable distance between the vegetable meatballs, so that you do not risk them sticking to each other during the baking process.

The meatballs should stay in the oven for about 30 minutes, after which you can take them out to leave them to cool.
