Ripe my peaches, peel off, separate the pulp and puree with a blender.
The remaining peaches are cut into slices.
Beat eggs with sugar and vanilla sugar until a light, lush mass is obtained.
Without ceasing to whisk, add odorless vegetable oil.
Then add the peach puree.
Lastly, we sift the flour with a baking powder for the dough and starch.
Combine all the ingredients with a mixer at minimum speed.
On a baking sheet covered with parchment paper and greased with vegetable oil, spread peach slices. Sprinkle peaches on top with starch, starch absorbs peach juice, which can flow out.
Pour the dough onto a baking sheet and distribute. I have a standard baking sheet 30/40 cm.
Bake in the oven preheated to 180 * C for 15-20 minutes. We check readiness with a wooden skewer, piercing the cake; there should be no traces of raw dough on the skewer.
We take out the finished cake on a towel, which I sprinkle with powdered sugar. Carefully remove the parchment and roll up a tight roll. Cover with a towel and completely cool, you can in the refrigerator. Sprinkle icing sugar on top of the roll. We cut it with a sharp knife so that it does not break, since the roll is very tender and soft.
The dough is fully baked, very tender, soft and moist. Pleasant peach flavor is clearly felt! It is safe to say about such a roll that you can eat it with your lips, so tender it is. This roll does not need to be impregnated, since it is already wet, as if it was already saturated! Roll can be prepared with any seasonal or frozen fruits or berries, or without them at all, and smeared with cream. Prepare such a roll, you will be pleasantly surprised !!
