Cut the eggplant into strips. Sprinkle 1 tsp. salt, mix and set aside for about 15 minutes. Then squeeze out the excess liquid and fry in a pan with vegetable oil until tender. Then squeeze it from the marinade. Add fried eggplant, pickled onions, boiled eggs, cut into half rings, mayonnaise, salt to taste and mix in a salad bowl.
