Quince pie


  1. Quince 10-12 pcs
  2. Butter 200 gr
  3. Flour 2 cups
  4. Sugar 1.5 cups
  5. Lemons 2 pcs
  6. Salt to taste

2/3 butter cut into cubes and cool. Mix 1 cup + 1 tbsp. flour with 1 tablespoon sugar, 1 tsp salt, oil, 1/3 cup cold water. Put the dough thus obtained in the refrigerator.
Peel the quince, cut in half and remove the core.
Pour 2.5 liters of water into the pan. Add the zest of half a lemon, juice of 1.5 lemons, 1 cup of sugar, quince. Bring to a boil and cook under the lid for 8 minutes.
Preheat the oven to 190 degrees. In a saucepan, mix 0.5 cups of sugar with a pinch of salt and heat until the sugar begins to melt. Take out and mix with 2 tbsp. butter. Spread the quince, pour the remaining half of the lemon. Roll out the dough, spread on top of the quince. Put in the oven to bake at 190 degrees for 45-50 minutes. Remove from the oven, let cool.
