Tsvetaevsky apple pie


For the test (form 22 cm):

  1. Flour 150-160 gr (how much dough will take)
  2. Sour cream 15% 70 gr
  3. Butter 70 gr
  4. Sugar 2 tbsp
  5. Salt pinch
  6. Soda ½ tsp
  7. Vinegar 1 tsp

For filling:

  1. Apples 500 gr (already peeled from cores and peels)
  2. Lemon juice 2 tbsp (so that the apples do not darken)
  3. Sugar 120 gr
  4. Egg 1 pc.
  5. Flour 2 tbsp
  6. Salt pinch
  7. Sour cream 15% 200 gr

Sift flour, add salt, sugar, softened butter, sour cream, soda, topped with vinegar. Knead the dough, you don’t need to knead for a long time, just collect the dough in a single com, put it in cellophane and send it in the refrigerator for half an hour.

For pouring, mix sugar, egg, a pinch of salt, sour cream, add flour. Stir everything until smooth.

Peel the apples from the core and peel, cut into thin slices.

Cover the bottom of the split mold with parchment, distribute the dough in the shape, forming a side of about 5 cm.

Put apples on the dough, pour with sour cream filling.
