First you need to pickle the chicken. I advise you to pickle for a long time, at least 24 hours, so that all meat is well saturated with aromas. For the marinade, you need to grind or through the press, then as you prefer, chop all the garlic. Grate the zest of half an orange, gently, without touching the white shell, as it can give bitterness, which we do not need in this recipe.
Add soy sauce and salt, add salt to taste, soy sauce is also salty, so do not overdo it with salt. As they say, you can always add up, but what if the overflow? :) In the marinade, add 2 tbsp. Flavourless refined vegetable oil, as well as the juice of half an orange.
The chicken itself is well washed, we remove the remnants of the feathers, if any, and the coccygeal gland (it gives an unpleasant musky taste).
I really like to pickle a chicken in a hermetically sealed zip bag, nothing comes out anywhere, it is very convenient to distribute the marinade over the entire surface of the chicken. Leave the chicken to marinate for 24 hours in the refrigerator.
Now you need to prepare the chicken for baking: remove all the remains of garlic from the carcass, otherwise they will simply burn in the oven. As a result, the appearance will suffer from charred pieces of garlic, and the taste, too, as they are bitter. You also need to dry the whole chicken well with paper towels, so we get a crispier crust.
We cut the orange into thin slices and put it in a pocket between the meat and the skin of the chicken on both sides. In principle, the skin is easily separated from the meat; if necessary, you can always carefully cut it with a knife or kitchen scissors. Inside the chicken, you can put 2 slices of orange, do not need to clog her belly, let the air circulate inside. The tips of the wings can either be trimmed or wrapped with foil.
Bake a chicken at a temperature of 200-220 degrees (navigate in your oven) 1-1.5 hours. I baked 1 hour 20 minutes, the whole chicken was 2 kg. Readiness can be checked with a probe; the temperature inside the thickest part of the chicken (for example, fillet) should be 65-70 degrees.
