Grate the carrots.
Chop the cabbage finely.
Mix the cabbage and carrots well, mash with your hands so that the juice stands out.
Salt and mix well again, crush with a plate and put the load.
Leave the cabbage at room temperature for 3 days, be sure to mix the cabbage every day so that the gases come out. If this is not done, the cabbage will be bitter. Store ready cabbage in the refrigerator. Enjoy your meal!
