Salad with pickled chanterelles


  1. Mayonnaise 2 tablespoons
  2. Potato 2 pieces
  3. 3 carrots
  4. Celery root 0.5 pieces
  5. Chanterelles pickled 1 jar
  6. Leek (white part) 1 piece
  7. Parsley 0.5 bunch
  8. Smoked bacon 100 grams
  9. Vegetable oil 1 tablespoon
  10. Salt to taste
  11. Pepper to taste

Step 1: fry the bacon.

Cut the bacon into cubes about 0.5 cm thick. Then fry it in vegetable oil until golden brown. Put the fried bacon on a paper towel and pat dry.

Step 2: cook the vegetables.

Cook carrots, potatoes and celery until cooked, cool and peel. Then cut the vegetables into small cubes.
Chop the leek very finely.
Chanterelles can be left whole, or cut into large pieces.

Step 3: mix the ingredients.

Combine all prepared ingredients, add mayonnaise, salt and pepper. Mix well and refrigerate 1 hour about.

Step 4: serve the salad with pickled chanterelles.

Salad with pickled chanterelles is hearty, so serve it as an independent dish with bread or crackers, for example. By the way, with warm, just cooked croutons, the salad goes well.
