Ingredients for Dorado in Tomato Sauce
- Dorado 1 piece (medium size)
- Onion 1 piece (large)
- Bulgarian pepper 1 piece
- Canned tomatoes in their own juice 400 grams
- Cherry Tomatoes 7-8 pieces
- White wine 1 glass
- Vegetable oil 3 tablespoons
- Wheat flour 2 tablespoons
- Thyme 6 branches
- Bay leaf 2 pieces
- Allspice 10 pieces
- Salt to taste
- Ground black pepper to taste
- Main ingredients: Dorada, Onion, Pepper, Tomato

Baking dish, oven, frying pan, kitchen knife, tablespoon, spatula, cutting board.
Step 1: clean the fish.
Clean fish, wash, cut gills and fins, remove the tail. Make three shallow cuts on the sides.
Rub the dorada inside and out with coarse salt and ground pepper. Inside the fish, fold the thyme sprigs and bay leaves.
Step 2: fry the fish.
Roll the prepared fish in flour so that it covers the dorada on all sides.
Heat vegetable oil in a pan and fry the prepared fish in it.
Sauté on medium heat until golden brown on both sides, i.e. 3-4 minutes from each side.
After frying, put the fish in a plate and cover with foil so that it does not have time to cool.
Step 3: prepare the sauce.
In the same pan in which you roasted the dorada, let the onions chopped into feathers.
When the onion becomes softer, add the chopped bell pepper to it and fry everything together for a couple of minutes.
Cut the canned tomatoes into cubes and, together with the juice, send them to the pan with other vegetables.
Pepper to taste, salt and pour the wine.
Simmer everything together over low heat until the aromas of the sauce are mixed.
Step 4: bake the dorada in tomato sauce.
Take a baking dish and pour a portion of tomato sauce on it, lay the fried dorado on top and pour in the remaining sauce. Add sweet peas and washed cherry tomatoes on top, artistically scattering them.
Bake dorada in tomato sauce for 20-25 minutes at a temperature 190 degrees. The top of the dish will brown, and part of the sauce will evaporate.
Step 5: Serve the dorada in tomato sauce.
Serve the dorada in hot tomato sauce immediately after cooking. Rice or potatoes are suitable as a side dish, but you can do without it, just with bread. Both the sauce and the fish are wonderful.
