Boil the chicken ventricles in advance and cool.
Cut the ventricles into not very thick plates.
Cut the cheese into small cubes. Add to the ventricles.
Grate raw carrots. Cut eggs randomly. Chop onions not large. Add everything to the cheese with the ventricles.
Add black pepper and capers. Mix.
Season with mayonnaise before serving. Serve garnished with herbs.
