Potato zrazy with meat, or how tasty and easy to feed the whole family

Ingredients

For the test

  1. Potato 1 kg.
  2. Salt to taste
  3. Black pepper to taste
  4. Eggs 1 pc.
  5. Flour 1 tbsp
  6. Starch (preferably corn) 1-2 tbsp.

For filling

  1. Boiled meat 200 gr.
  2. Onions 2-4 pcs.
  3. 1/2 carrot
  4. Parsley 1/3 bunch
  5. Salt to taste
  6. Black pepper to taste
  7. Sweet Paprika 1 tsp
  8. Cooking Oil

For breading

  1. Breadcrumbs 3 tbsp
  2. Sweet Paprika 2 tsp
  3. Flour 2 tsp
  4. Salt pinch

Cooking:


Boil potatoes in their skins. Boil meat (any).

Finely chop the onion. Coarse carrots on a coarse grater. Fry onions with carrots in vegetable oil, salt and pepper to taste, add paprika, boiled finely chopped meat, chopped greens. I am mixing.

I peel the boiled potatoes, knead in mashed potatoes, add salt, pepper, egg, starch and flour. Knead the potato dough. I divide into 6 parts. Depending on the type of potato, starch may need a little more or less. I always fry one pie, then look, if it rolls well, sculpt the rest, if not, add another 1 tbsp. corn starch. In ready-made zrazy he will not be felt.

I lay a cling film on a plate or just a plastic bag, a little grease with vegetable oil. I put a lump of dough, turn it into a cake. I put 1/6 of the filling in the middle of the tortilla, I collect the edges of the film to the center and press it to form a ball, then I take it out of the film and give the shape of an oblong pie. Thus, I form all zrazy.

I’ll prepare a breading for zraz. I mix breadcrumbs, sweet paprika, flour and salt.

I roll the zrazy in the prepared mixture and fry in a preheated pan on both sides. Be sure to put zrazy in a heated pan, otherwise the crust will not seize and the zrazy will turn badly. Take off on paper towels.

On top is a tanned crust, soft potato dough and a lot of delicious toppings. Very hearty, aromatic, melt in your mouth dish!
