Homemade Adjarian Khachapuri with Two Types of Cheese


For the test:

  1. Flour 500 g.
  2. Milk 300 ml.
  3. Salt 1 tsp
  4. Sugar 2 tsp
  5. Yeast 10 g.
  6. Vegetable oil 25 ml.
  7. Yolk for greasing

For filling:

  1. Suluguni 300 g
  2. Mozzarella 300 g
  3. Water 50-100 ml.
  4. 4 eggs
  5. Butter 100g.

Pour yeast into warm milk. Let stand for 2 minutes.

Add salt, sugar, 1/3 part of flour to milk. Mix well. Leave for 15-20 minutes.

Stir in the rest of the flour, add the vegetable oil. Knead the dough well. Divide it into parts. I got 4 pieces, roll the ball, squeeze it a little with his hand. Sprinkle the baking sheet with flour, spread the dough cakes, sprinkle flour on top, cover with a film and send for proofing for 1 hour.
Grate both cheeses, add water (you can cream or milk).

Roll out the dough to a thickness of about 0.5 cm, spread the filling on top. We bend from all sides into the boat.

Grease the dough with yolk. We send to the oven to bake at 200˚С until ready. It took me about 15-20 minutes. The dough should be podgold.

We take the khachapuri out of the oven, break the egg into the filling and send it to the oven for another 2-3 minutes.

On the finished khachapuri we put a couple of pieces of butter.
