Green salad with barley and hazelnuts


  1. Perlovka 100 gr
  2. Hazelnuts (toasted) 50 gr
  3. Parsley leaves 2-3 cups
  4. Celery leaves 0.5 cup
  5. Dill 1-2 tbsp
  6. Radish 4-5 pcs medium size
  7. Sumy 0.5-1 tsp
  8. Lemon juice 2 tbsp
  9. Olive oil (extra virgin only) 3-4 tbsp
  10. Black pepper to taste
  11. Salt to taste

Rinse the barley, pour into boiling salted water and cook for 45 minutes. Allow to cool.
Cut greens and radish and mix with barley. Chop the nuts and add to the salad.
Thoroughly mix sumy, lemon juice and olive oil, season salad. Salt, pepper. Mix.
