After we eat fresh mackerel (or any other fish), cut off the fins, remove the ridge and remove the bones. Cut into pieces.
We add salt, bay leaf to the water, mix well the pepper and send the fish to the brine. We put in the refrigerator for 1.5 hours (if the pieces of fish are large, then it is worth holding a little longer in the brine).
After this time, we take out the fish and transfer it to the pan, completely drain the brine and send it to the refrigerator for 2 hours, so that the salt is completely distributed throughout the fish.
Serve to the table, pouring a little sunflower oil and adding onions. Enjoy your meal!
