Easter cake "Kraffin"

Ingredients

For the test:

  1. Flour 350 g.
  2. Milk 120 ml.
  3. Dry yeast 6 g.
  4. Sugar 80 g.
  5. Pinch of salt
  6. Egg 1 pc.
  7. Egg yolks 2 pcs.
  8. Butter (melted) 30 g.

To lay the dough:

  1. Butter (room temperature) 100 g.
  2. Raisins 100 g.
  3. Cinnamon 2 tsp
  4. 1 tsp orange peel

Pour yeast into warm milk, 1 tbsp. sugar and 1 tablespoon flour. Mix and leave for 10 minutes in a warm place. During this time, a cap of foam should form on the milk. If this does not happen, then the yeast is spoiled. You need to start all over again with a new pack of yeast.

Soak raisins in warm water.

For the test.

In 1 egg and 2 yolk, add sugar and beat until the mass turns white.

Sift the flour, add salt, mix. Pour dough into flour, add eggs with sugar and melted butter. Knead the dough.

The dough is rather sticky, but we don’t add flour. Knead well until the dough stops sticking to your hands. It takes about 10 minutes.

We grease the bowl with vegetable or butter. Put the dough in a bowl and cover with cling film. The dough should stand for about 40 minutes and increase in size by 2 times.

After proofing, divide the dough into pieces. I have 1 large and 1 small part, because my shapes are different: large with a diameter of 14 cm, small - 9 cm. We turn each part of the dough into a ball. We give rest 10 minutes under a towel.

In pre-soaked raisins, rub the zest of orange. Mix well.

The first piece of dough is rolled into a thin long layer. It can be stretched, it stretches well. Spread softened butter on top of the dough, sprinkle with cinnamon and raisins. We turn the dough into a tight roll. Put the first roll under the towel. And we do the same with the second piece of dough.

Each roll is cut lengthwise into 2 equal parts, but not completely. Spiral one half of the roll towards the undercut end of the dough (form the bottom). We also twist the second half with a spiral and lay on top of the first (we form the top). We twist the dough so that the cut that we make turns out to be on top.

Gently place the Kraffin cake in the baking dish, cover with cling film and place in a warm place for 20 minutes to lift.

Preheat the oven to 200 ° C, bake cakes for 10 minutes. Then lower the temperature to 180 ° C and bake for about 25 minutes. If the cake begins to burn, cover the top with foil.

My little cake was baked a little less.

Check the finished cake with a skewer, it should be dry.

Cool the cakes completely. It is better to put them on their side on a towel and periodically turn over, otherwise they may settle.

Sprinkle the prepared cakes with powdered sugar or glaze.
