Eggplant with minced meat in the oven


  1. Eggplant 1 pc.
  2. Minced meat 300 gr.
  3. Onion 1 pc.
  4. Garlic 1 tooth.
  5. Eggs 1 pc. (small or half)
  6. Salt to taste
  7. Black pepper to taste
  8. Provencal rights 1/4 tsp
  9. Sweet Paprika 1/4 tsp
  10. Tomato juice 1 cup
  11. Bay leaf to taste

1) Grind 300 gr. meat, a small onion and a clove of garlic. Add salt, black pepper and your favorite seasoning, add 1 small egg if desired. Mix well and beat the minced meat on the bottom of the bowl.

2) Cut the eggplant in half. Place each half between skewers and make cuts, but not completely. I cut into rather thin plates, after the oven they will be very soft, if you want ready-made eggplants to get a denser structure, cut into thicker plates.

3) Cut each half along another half, thus 4 billets are obtained.

4) Roll the eggplant and fasten with a skewer. Transfer to a baking sheet, greased with vegetable oil and fill with minced meat. For eggplant, it took me exactly half the mincemeat; I made small meatballs from the leftovers. Top with sprinkled with grated cheese, 10-15 minutes before cooked or sweet paprika. Pour in tomato juice, add a bay leaf, add a little salt and cover with foil. Put in a preheated oven to 180 * C and cook for 25-30 minutes. Cooking time depends on the size of the eggplant, the amount of minced meat inside and the features of your oven. Enjoy your meal!
