Homemade noodle beef soup

Ingredients for Making Beef Soup with Homemade Noodles

For soup

  1. Beef 1,700 kilograms
  2. Brain bone (beef) 1 kilogram
  3. Onion 1 piece
  4. Leek 3 pieces
  5. 3 carrots
  6. Parsley root 3 pieces
  7. Celery (root) 1/2 pieces
  8. Celery (stem and leaves) to taste
  9. Fresh parsley 1 bunch
  10. Salt to taste
  11. Water optional

For noodles

  1. Egg 1 piece
  2. 2 egg yolks
  3. Wheat flour 200 grams
  4. Salt 1 pinch
  5. Water 5 tablespoons (depending on egg size)
  • Main ingredients: Beef, Onion, Carrot, Celery, Flour
  • Portion 5-8

Inventory:

Saucepan, kitchen knife, cutting board, rolling pin, ladle, slotted spoon.

Cooking:

Step 1: prepare the meat.


Rinse the meat and, if necessary, cut into pieces of such a size that they fit easily into the pan. A pan, by the way, will need a big one.

Step 2: scald the meat.


Boil water in a saucepan and send beef meat and bones to boiling water. Boil them there for 2-3 minutes. This is necessary so that the broth is cleaner and gives less foam.
Remove the beef from the pan and rinse thoroughly with cold water.
Drain the water in which the meat was cooked, rinse the pan.

Step 3: Cook the beef broth.


Transfer the meat to a pan, pour clean water, add about 1 tablespoon salt and put everything on fire.
As you cook, control the power of the fire and remove foam from the surface when necessary.

Step 4: prepare the vegetables.


Rinse and peel the necessary vegetables while the meat is being cooked. Cut them afterwards into large pieces.

Step 5: add the vegetables to the soup.


When the meat is almost ready, send vegetables to the pan and cook it all together until fully cooked.
And after everything is cooked, remove the meat and vegetables from the broth, and strain the liquid through gauze.

Step 6: cook the noodles.


You can knead the dough for noodles of two eggs and 200 grams of flour, but with one egg and two yolks it turns yellow. Also add a little water during the kneading process to make the dough steep but elastic.
The order is this: the flour is mixed with salt, then eggs are gradually added and at the end, if necessary, a few tablespoons of water.
Leave the finished dough covered with a film on 30 minutes.

Roll out the noodle dough quite thinly, and then roll it gently into a roll.

Then cut the roll into strips of the thickness you want. You can make very thin noodles, and quite thick.

Here, the noodles are also thicker due to the rolling of the dough, simply because I think it tastes better.
Leave the noodles to lie on 15 minutesso that it dries a little.

Step 7: add the noodles to the soup.


Boil the broth and send your noodles into it on 2 minutes.

In between, cut the boiled meat and vegetables that you want to leave in the soup into small cubes.

Add meat and vegetables to the noodle soup and serve hot, garnished with fresh parsley leaves.

Step 8: serve beef soup with homemade noodles.


Beef soup with homemade noodles is just a jumble! I believe that every self-respecting housewife should be able to cook it. Of course, everyone should have their own secrets and tricks, but I hope that this recipe will be useful to you.
