Cottage cheese and caramel cake without baking

Ingredients

For the cake:

  1. Cookies 300 gr
  2. Butter 100 gr
  3. Cottage cheese 500 gr
  4. Sugar 200 gr
  5. Vanilla sugar 1 tsp
  6. Water 50 ml
  7. Milk 200 gr
  8. Gelatin 25 gr
  9. Cream 33% 250 gr
  10. Banana 1 pc.

For glaze:

  1. Oil 1 tbsp
  2. Cocoa 1 tbsp
  3. Milk 2 tbsp
  4. Nuts to taste
  5. Chocolate to taste
  • Main ingredients: Banana, Milk, Cottage cheese, Butter, Cream, Nuts, Shortcrust pastry, Cocoa and chocolate, Sugar

Inventory:

Cooking:


Step 1 - Gelatin.


Soak the milk with gelatin, mix with a whisk and set aside to swell. The finished gelatin is then laid out in a mug and brought to the plate until it is completely dissolved at a temperature of 70-80 degrees.

Step 2 - Cookies.


Grind the cookies to the crumbs, put the butter in a bowl to the liver and mix well, make a kind of dough. We tighten the edges of the mold with cling film and spread the cooked crumbs to the bottom of the mold, compact and evenly distribute it so that the cake is dense and does not crumble. Leave some crumbs to decorate the cake and remove the form for 30 minutes in the refrigerator.

Step 3 - Caramel Fill


Pour sugar into the stewpan, add water and put on the stove. Pour cream into a prepared caramel base in a thin stream and gently mix with a whisk until sugar is completely dissolved.

Step 4 - Curd.


We spread fresh cottage cheese in a large bowl. If the cottage cheese is dry, you can add sour cream. Add vanilla sugar in a bowl with cottage cheese and stir until smooth, adding 1-2 tbsp. milk for convenience. Pour the caramel from the stewpan into a bowl with curd and mix well. In a mug with cooled gelatin, add 2 tbsp. curd and mix thoroughly. Then we add gelatin from the mug into the curd mass and mix well too.

Step 5 - Form a Cake.


Pour half the gelatin mass into a mold and equalize in it, distributing it well, then sprinkle with the remaining crumbs, which we carefully level. On top of the crumbs, lay the banana previously cut into rings, pour the remaining gelatin mass and level it, then we put it in the refrigerator until it completely hardens.

Step 6 - Glaze.


Put butter, sugar, cocoa, milk in a stewpan and put it on a stove with a temperature slightly lower than average. We make chocolate smudges from the prepared glaze by placing it in a culinary bag, decorate the cake with nuts and chocolate as desired and taste, then boldly serve it on the festive table.
