Ingredients

For okroshka

  1. Water 2.5 L
  2. Chicken fillet 1 pc.
  3. Cooked sausage 250-300 gr
  4. Cucumber 2 pcs.
  5. Boiled potatoes 5 pcs.
  6. Boiled eggs 5-6 pcs.
  7. Chives 1 bunch
  8. Dill 1 bunch

For homemade mayonnaise

  1. Raw washed egg 1 pc.
  2. Vegetable oil 120-150 ml
  3. Lemon juice 1 tbsp
  4. Salt 1/3 tsp
  5. Sugar ½ tsp
  6. Mustard 1 tsp
  • Main ingredients: Cucumber, Greens

Cooking:


Boil chicken fillet in water for 30-40 minutes, add salt to taste to taste. Refrigerate the broth for 3 hours, during this time harden all the particles of fat, strain the broth through a sieve with 2 layers of gauze.

2. Dice potatoes, eggs, boiled sausage, cucumber.

3. Chop green onions and dill.

4. For mayonnaise: transfer 1 egg, mustard, lemon juice, salt, sugar into a jar or container with a small diameter and high walls. Pour 120-150 ml of vegetable oil. Cover the yolk with a blender leg and beat until a thick white emulsion is obtained.

5. Pour a little broth into mayonnaise and mix with a blender to make the mayonnaise more liquid. Pour okroshka with broth with mayonnaise and let it brew for 4 hours in the refrigerator. When serving, lemon juice and salt can be added portionwise as desired.
