Rice noodles with zucchini sauce

Ingredients

  1. Rice noodles 200 gr
  2. Zucchini (young) 600 gr
  3. Tomatoes 500 gr
  4. Fish sauce 1 tbsp
  5. 2 cloves of garlic
  6. 2 tbsp olive oil
  7. Freshly ground black pepper to taste
  8. Salt to taste
  9. Feta 100 gr
  10. Mint leaves to taste

Cooking:


Pour rice water with boiling water. Cut the zucchini into small slices. Dip the tomatoes in boiling water, remove the skin and remove the seeds.
Heat olive oil in a pan. Squeeze a few cloves of garlic into the oil. Add chopped zucchini. Add salt. Add tomatoes. Add a little tomato sauce. Stew for 10 minutes, stirring over low heat. Add chopped mint leaves 1 minute before cooking.
Put the noodles in a colander and mix with the sauce. Add 1 tablespoon of fish sauce. When serving, sprinkle with feta cheese, chopped into small cubes and chopped mint leaves.
