Step 1: chop the potatoes.
Fresh potatoes have a fairly thin skin, so you don’t need to peel it. Rinse it well enough under running water by wiping it with a brush or a rough sponge.
After washing, cut the potatoes into halves, then each half in half, and then again. It turns out that each potato is cut into 8 equal parts.
Combine the olive oil with the garlic passed through the press and grease the potato wedges with it.
Step 2: chop the greens.
Rinse the greens and chop very finely.
Step 3: bake fresh potatoes.
Place the potatoes on an even baking sheet. If all the potatoes do not fit on one baking sheet, then take two. In any case, the potato should lie in one layer, and between its slices should be some space.
Preheat the oven to 220-230 degrees and send potatoes into it. Bake 10 minutes, then turn the slices over and bake them again 10 minutes. If after this time the potato is not ready, turn it over and return to the oven for another 5-10 minutes. Cooking time depends on the variety and size of the potato.
Once the potatoes are ready, sprinkle them with salt, pepper and fresh herbs. Add grated parmesan and let cool slightly.
