Baked eggplant with cheese

Ingredients for Cooking Eggplant Baked with Cheese

  1. Eggplant 2 pieces (medium size)
  2. Feta cheese a small slice
  3. Hard cheese (gruyere, cheddar) a small piece
  4. Tomato 1 piece (large)
  5. Olive oil to taste
  6. Oregano to taste
  7. Bulgarian red pepper 1/2 piece (optional)
  8. Salt to taste
  9. Ground black pepper to taste

Step 1: prepare the eggplant.

Rinse the eggplants, dry them with paper towels and cut them in half lengthwise from the tail to the opposite end.

Cut the knife crosswise on the pulp with a knife.

Step 2: fry the eggplant.

Heat the oil in a frying pan and put the eggplant in it with the skin up. Fry for a few minutes for the vegetables to brown.

Step 3: Three Cheese

While eggplant is fried, grate hard cheese and crush feta cheese. Shuffle them with each other.

Step 4: add pepper and tomato to the cheese.

Peel a half of red pepper from seeds and cut into small cubes. Mix pepper with cheese.

Scald the tomato, peel, remove the seeds, and finely chop the remaining pulp and mix with cheese and pepper.

Step 5: bake eggplant.

Transfer the fried eggplants to the baking tray and send to the preheated 180 degrees oven on 20 minutes.

Step 6: remove the flesh from the eggplant.

The flesh of baked eggplant becomes soft, so you can easily remove it with a spoon. Clean the eggplant carefully so as not to damage the skin.

Step 7: prepare the filling.

Combine the eggplant pulp with cheese and vegetables. Salt to taste and pepper.

Mix everything very well to make a paste.

Step 8: stuff the eggplant.

Stuff the eggplant with the previously cooked cheese and vegetable paste. Put the filling with a spoon and condense it.

Step 9: bake eggplant with cheese.

Lubricate the mold with butter, put stuffed eggplant in it. Send bake to the oven on 10 minutesuntil the filling in the eggplant is covered with a golden brown.

Step 10: serve the eggplant baked with cheese.

I decided to decorate the eggplant with tomatoes. To do this, peeled tomatoes and seeds need to be cut into cubes, salt to taste, pepper and season with oil.

Remove the eggplant and cheese from the oven and lay the chopped tomatoes on top. You can also add some cheese. And that’s all! Serve the finished meal on the table and enjoy it.
