Summer pasta


  1. spaghetti 450 gr
  2. garlic 3 cloves
  3. zucchini or zucchini 2 pcs.
  4. carrots to taste
  5. onion 1 pc.
  6. tomato sauce 2 tbsp
  7. fresh tomatoes 1 kg
  8. eggs 3 pcs.
  9. olive oil 2-3 tbsp
  10. Italian herbs 2 tsp
  11. 1/3 tsp chili flakes
  12. fresh basil to taste
  13. grated Parmesan cheese 1 cup
  14. salt to taste
  15. black pepper to taste

Boil the pasta according to the instructions on the package. Dip the tomatoes in boiling water, remove the skin, remove the seeds, cut into small pieces.
Pour olive oil into the stewpan. Add chili pepper flakes to cold olive oil and heat. Add chopped onions, garlic, carrots and zucchini to hot oil. Fry until the onions are transparent. Add tomato sauce and tomatoes. Salt, pepper, add Italian herbs. Cook without a lid for 10 minutes.
Add the pasta, mix well. Beat the eggs, shake. Add grated Parmesan cheese. Stir and pour into pasta. Stir pasta with cheese and egg, cover and simmer over low heat for 3 minutes. When serving, sprinkle with chopped basil leaves and grated Parmesan cheese.
