Oven-baked pies on a gingerbread dough

Step 1 - Dough.

Sift flour, add dry yeast and stir. Whisk eggs with sugar with a whisk, add salt, vanillin, warm milk, melted butter, mix well. Gradually add the mixture to the flour and knead the dough. The dough should turn out soft, slightly stick to your hands. Then lightly grease the dough with sunflower oil and leave it in a warm place for two hours.

Step 2 - Filling.

Cut the apricots into small pieces, add three tablespoons of sugar and put on a slow fire. While stirring, let them boil until sugar is completely dissolved. Dilute a tablespoon of starch in a small amount of water, add to apricots and let it boil again. Set aside the apricots to cool.

Step 3 - Bake.

Divide the approached dough into equal pieces, make koloboks, roll each kolobok and put a spoonful of filling in the middle. Form the pies. Put the pies on a baking sheet covered with parchment paper, grease with an egg mixed with two tablespoons of milk, let the pies go a little further and put in a preheated oven for 40-45 minutes. Bake over medium heat.
