Cut eggplant into rings, sprinkle with salt and leave to let the juice go. About 30 minutes.
Chop the onion finely. Peel hot peppers from seeds and chop finely. Grate the carrots.
Pour oil into a cauldron or thick-walled dish and heat it. Add carrots and onions. Mix. Simmer under the lid for about 10 minutes. Before softening.
Add hot pepper and tomato paste. Mix.
Pour in water and mix again. Salt and add sugar. Mix. Cover and turn off the stove.
Fry eggplant in a pan on both sides, until golden brown.
Lay out eggplant and carrot sauce in layers. Leave to cool.
