A step-by-step recipe for cooking caviar from zucchini: We prepare the products necessary for the preparation of delicious squash caviar. After cutting the peel from a large zucchini, remove the seeds and cut it into a large cube. Put the sliced ​​zucchini into a rather large pan, add 1/3 of the vegetable oil from 250 g. and fry for 20 minutes at the highest heat. Cut 600 gr. onions arbitrarily, but not too finely. Pour boiling water 600 gr. tomatoes. We rub 600 gr. carrots on a coarse grater. Fried zucchini spread from the pan into the pan. Pour chopped onion into a pan, add 85 gr. vegetable oil and fry while stirring. Carefully remove the skin from the tomatoes, cut into large cubes and put in a plate. We spread the grated carrots in the pan to the onion and cook by stirring for about 15 minutes. We put the carrots with onions in a pan with zucchini. Put the chopped tomatoes in a pan, add the remaining vegetable oil and fry at high temperature. Put the tomatoes fried to a soft state to the remaining vegetables in a pan and gently grind until smooth - mashed with a blender. Add 1 tablespoon to the pan to vegetables. salt for salting, 1 tbsp. sugar, 0.5 tsp ground red pepper, 2 tbsp. mix the tomato paste once again and mix it properly. Put the pot on the stove, which we turn on the small fire and stir for 20 minutes, then add 1 tsp. citric acid, mix and cook for another 5 minutes. We spread the hot caviar using a funnel in sterilized jars to the very top. We tightly close the jars with sterilized lids, turn them over and cover them with a blanket to leave to cool. The result is 2.5 liters of delicious squash caviar.
