Step 1: beat eggs with sugar.
Put eggs and cottage cheese in advance from the refrigerator, so that by the time they are cooked, they become room temperature.
Melt the butter and set aside to cool.
Beat the eggs with a mixer until foam. Add sugar and beat again until it dissolves. Beat about 5 minutes.
Step 2: beat the cottage cheese.
Separately mix cottage cheese with wheat flour and starch. Then add the slightly cooled melted butter and beat again.
Step 3: mix the egg and curd masses.
Mix the egg mass with the curd gradually, stirring all the time, and beat with a mixer until smooth.
Step 4: bake a cheesecake.
Cover the mold with baking parchment, grease the edges with oil and sprinkle with breadcrumbs.
Transfer the entire mass to a baking dish, and carefully scroll to level. Bake in preheated before 150 degrees oven for 100 minutes. And then turn off the oven and do not open it for another 1 hour.
Step 5: decorate Viennese cheesecake with strawberries and chocolate.
While the cheesecake comes in a cooling oven. Melt the chocolate by mixing it with a few tablespoons of milk. You can melt both in a water bath and in the microwave, choose the method that you like best.
Remove the cheesecake from the mold and transfer it to the serving plate. Using a spoon, apply alternately on it first white and then milk chocolate.
Garnish the washed strawberries with chocolate and let it freeze a little.
Put the strawberries on a cheesecake and you can serve!
