Chicken with Rice and Carrots

Ingredients for Cooking Chicken with Rice and Carrots

  1. Chicken drumstick 8-9 pieces
  2. Carrot 4 pieces
  3. Onion 2 pieces
  4. Rice 450 grams
  5. Beef broth (or water) 750 milliliters
  6. Vegetable oil 3 teaspoons
  7. Garlic 2-3 cloves
  8. Sour cream 2 tablespoons
  9. Salt to taste
  10. Pepper to taste

Baking tray, foil or baking paper, blender, frying pan, plate.

Cooking:

Step 1: prepare the ingredients.


Peel the carrots, onions and garlic. Rinse well. Chicken legs should also be washed and dried.

Step 2: pickle the chicken.


Mix sour cream with salt and pepper, dip the chicken drumsticks into it and mix well again. Leave the chicken in the marinade on one hour, approximately, putting it in the refrigerator.

Step 3: chop carrots with onions.


Send onions with carrots and garlic to a blender and chop in a pulsed mode.

Step 4: stew carrots with onions.


Heat a little oil in a pan and fry the carrots chopped with onions and garlic in it. Stew, stirring, until vegetables give a bright orange juice, which is mixed with oil. Salt.

Remove the vegetables from the heat and set aside a little, wait until it “cools” slightly and mix it with chicken in sour cream.

Step 5: bake chicken with rice and carrots.


Take a baking tray (it should be quite deep) and lay the stewed vegetables on its bottom with an even layer. Then put the washed rice (salt and pepper), and on the rice - chicken drumsticks in a marinade.

Pour in the broth or water, cover the baking sheet with foil / baking paper and send everything to the preheated 180 degrees oven on 1 hour, about. You can sprinkle everything with fresh parsley or dill.

After an hour, remove the foil / baking paper from above and leave everything in the oven for another 10 minutesso that rice and chicken are covered with a golden brown.

Step 6: serve chicken with rice and carrots.


Serve chicken with rice and carrots hot. I decorated the dish with pomegranate seeds and sour cream, but a vegetable salad or salsa is also suitable here. Very tasty and full dinner for the whole family.

Recipe Tips:

- You can also use hips or whole chicken legs for cooking, but for the latter, the cooking time will need to be slightly increased.
