Baked tomato soup


  1. cream cream 2 kg
  2. onion 1 pc.
  3. garlic 1 head
  4. dry thyme 1 tsp
  5. lemon zest 1-2 strips
  6. butter 1 tbsp
  7. 1/2 l chicken or vegetable broth
  8. cream 100 ml
  9. salt to taste
  10. pepper to taste
  11. some feta cheese to taste

Preheat the oven to 220 C. Cut the tomatoes in half and bake on a baking sheet for 25 minutes. Put on top a whole unpeeled head of garlic and bake for another 20 minutes. let cool. Peel the garlic, peel the tomato.
Dissolve the butter in a pan with a thick bottom. Add coarsely chopped onions and fry until transparent. Add garlic, tomatoes, thyme and carefully place strips of lemon zest on top.
Simmer on low heat for 10 minutes. Then remove the zest. Add broth. Using a blender, turn into mashed potatoes. Add salt, pepper. Cook over medium heat for 10 minutes. When it stops boiling add cream and mix. When serving add crumbs of feta cheese.
