Baked vegetables for the winter

Ingredients for Cooking Baked Vegetables for the Winter

  1. Zucchini 4 pieces
  2. Eggplant 3 pieces
  3. Tomatoes 6 pieces
  4. Thyme fresh 4 sprigs
  5. Garlic 10 cloves
  6. Salt 3-4 tablespoons
  7. Pepper to taste
  8. Olive oil 300 milliliters (+ a little for baking)
  • Main Ingredients: Eggplant, Tomato, Zucchini, Garlic
  • Serving 3 servings

Inventory:

Baking tray, parchment, kitchen knife, cutting board, 3 cans of 800 grams.

Cooking:

Step 1: prepare the vegetables.


Rinse the zucchini, eggplant and tomatoes well, and then cut them into circles of small thickness. Just sort the garlic into cloves without peeling them. Thyme sprigs rinse and dry.

Step 2: bake vegetables.

Set the oven to warm up 180 degrees.
Spread the baking parchment on a baking sheet and place the circles of vegetables on it, sprinkling them with salt and pepper. Stir so that the spices are well distributed. Place garlic cloves on top and pour all over with oil.
Bake in the oven for 40-45 minutesuntil the vegetables are cooked and dried. Turn them carefully from time to time so that the eggplant, tomato and zucchini slices are cooked evenly on all sides.
Choose thyme sprigs and garlic cloves from baked vegetables. Remove the herbs and peel the garlic, after baking it is simply squeezed out and husks.

Step 3: harvest baked vegetables.


Arrange circles of hot baked vegetables in sterilized jars, alternating them with peeled garlic. Fill the workpieces with olive oil so that there are no air bubbles between the vegetables, to the very top and close tightly.
You can eat such a workpiece through 2 days. Store an open jar in the refrigerator, and a closed one in a dark and cool place.

Step 4: serve prepared baked vegetables.


Baked vegetables can be served flavored salad. You can add them to pizza or your original dishes.

Typically, baked vegetables do not survive until spring, simply because when one jar ends, I really want to open a new one, it doesn’t matter if I set a festive table or cook an everyday dinner.

Recipe Tips:

- Some housewives fill the salad with hot oil so that it is better stored.
