Ingredients for making cottage cheese and cookie cheesecake

For the basics

Cooking cottage cheese and cookies cheesecake:

Step 1: prepare the base of the cookies.


First of all, you need to chop the cookies. Walk on it with a rolling pin or send to a blender.

Mix soft butter with sugar, and then add cookie crumbs to this mixture and mix everything very well together to make a homogeneous mass.

Step 2: fit the base into the mold.


Lubricate the cheesecake pan with a small amount of butter and place the cookie mass in it.

Spoon the cookies all over the bottom of the mold and go to 2 centimeters around the edges. Send until all this is in the refrigerator, exactly as much as you need to prepare the curd mass.

To prepare the curd mass, simply mix all its components with a mixer, so that a completely homogeneous consistency is obtained. First, mix the cottage cheese at a low speed with sugar and a pinch of salt, then flour and sour cream, and then beat one egg each, stirring thoroughly after each. Add lemon zest and vanilla last.

Remove the mold from the refrigerator and carefully pour the curd into the cookie base.

Bake cheesecake first with 170 degrees (in preheated oven) for 15 minutes. Then reduce the temperature to 120 degrees and bake more 60 minutes. But do not leave the cheesecake unattended, especially if you are cooking for the first time, as everything depends on your oven as well, and the cottage cheese may start to burn and become too “golden brown”.

When the cottage cheese and cookie cheesecake is ready, leave it to cool at room temperature. It should cool completely, it’s ideal to cook dessert in the evening, and decorate and serve it in the morning.
You can decorate a cheesecake than your soul desires. Here it is homemade berry jam. But just powdered sugar and chocolate icing will do, and even without anything the dessert will be delicious.
