Step 1: prepare the salmon filet.

Slice the salmon into narrow strips about 8 cm.
Put the salmon fillet on a baking sheet covered with parchment baking paper, skin down.

Sprinkle the fish fillet with coarse sea salt.

Carefully pour olive oil.

Step 2: bake salmon fillet.

Preheat the oven to 78 degrees. When it is warm, put the salmon fillet in it and bake for 1 hour. At this temperature, the protein will curl.
After baking with a wooden spatula (so as not to damage the fillet), remove the salmon from the skin and transfer to a serving plate.

Step 3: serve the salmon filet.
