Ingredients for making chanterelle pasta
- Spaghetti 200 grams
- Chanterelles 100 grams
- Bacon 80 grams (more meat than fat)
- Onion 1 piece
- Garlic 1 clove
- Cream 30% 3/4 cup
- Egg yolk 1 piece
- Salt to taste
- Ground black pepper to taste
- Vegetable oil for frying
- Green onion for serving

Frying pan, pan, colander, kitchen knife, cutting board, spatula, tongs.
Step 1: Cook the Spaghetti
Set the spaghetti to boil in salted water. Boil them as much as indicated on their packaging, so as not to digest. While the spaghetti is being cooked, start cooking the chanterelles.
Step 2: fry the chanterelles.
Cut the onions into small cubes and put it in a pan with hot olive oil. Toast, stirring, over medium heat until transparent.
Add the finely chopped clove of garlic to the onion and fry for one more minute.
Cut the bacon into small cubes and add it to the onion with garlic. Fry 5 minutes.
Add washed and peeled chanterelles to the pan; still fry 5 minutes.
Pour in the cream and cook over low heat for 10-15 minutesuntil a thick sauce is formed.
Step 3: mix the spaghetti with the chanterelles.
Season the chanterelles with salt, pepper and finely chopped green onions.
Add spaghetti to the pan with chanterelles (pre-drain water from them), mix and cook together for a while.
Add whipped yolk at the end and mix again.
Remove the cooked pasta with the chanterelles from the heat, salt, pepper again to taste, and then serve.
Attention: use forceps to mix the paste, it is much more convenient than a spatula or fork.
Step 4: serve the chanterelle paste.
Serve hot chanterelle pasta immediately after cooking. Garnish with fresh green onions on top and enjoy the taste of the dish you prepared.
