Shish kebabs with halloumi cheese

Ingredients for making vegetable skewers with halloumi cheese

Kebabs

Marinade

Skewers, kitchen knife, cutting board, juicer, jar, deep plate.

Cooking:

Step 1: prepare the marinade.


To prepare the marinade, you will need a glass jar or container with a tight lid.
Grate a clove of garlic, add oregano, salt and black pepper.

Pour in freshly squeezed lemon juice and olive oil.

Close the container tightly and shake well so that its contents mix.
You can store the marinade in the refrigerator, but be sure to warm it under a stream of warm water before pouring it into vegetables or anything else that you will pickle.

Step 2: chop vegetables and cheese.


Cheese must be cut into large pieces, because too small can begin to melt ahead of time, when the vegetables are not yet ready.
Zucchini and zucchini cut into crescents, a thickness of 1 centimeter. Take small vegetables with a soft skin.
Cut the onion into thick cubes.
Rinse and dry the tomatoes.

Step 3: pickle vegetables.


Transfer the vegetables to a deep plate, so that it would be convenient for you to mix them in it.

Pour the marinade prepared earlier and mix until all the slices of vegetables are covered with a mixture of oil, lemon juice and spices.

You do not need to pickle for a long time, mix everything well enough.

Step 4: string on skewers.


Use metal skewers or wooden, but wooden will need to be soaked in cold water in advance, 30-40 minutes before cooking.
Put pieces of vegetables and halloumi cheese on skewers, alternating everything in random order.

Step 5: fry vegetable kebabs with halloumi cheese.


Cook the vegetable skewers on a preheated grill. Fry for 3-4 minutes and flip each time when a clear grill pattern appears on one side.

Turn over carefully and do not try to maintain an average temperature so that the halloumi does not begin to melt.
Remove the prepared kebabs from the grill, pour lemon juice on top and decorate with fresh herbs.

Step 6: serve vegetable kebabs with halloumi cheese.


You can serve vegetables and cheese directly on skewers, complementing them with sour cream or yogurt sauce.

And you can carefully remove slices of vegetables and halloumi from skewers, wrap them in pita bread, again adding sauce, and enjoy such a summer snack. Hot or warm it tastes better.
