Step 1: prepare the ingredients.
Cut the beef pulp (without veins and fat) across the fibers into thin strips.
Cut the onions with feathers, wash the mushrooms and cut into halves (or quarters, if you have large champignons).
Step 2: fry the meat.
Melt the butter in a pan and send the chopped meat into it. Stir fry until beef changes color.
Step 3: add onions and mushrooms.
Add the onions to the meat and fry everything together 5 minutes.
Add the champignons and fry another 5 minuteswithout forgetting to stir.
Step 4: add spices and wine.
When the mushrooms become softer, add pepper, bay leaves.
Mustard, tomato paste.
Pour in the wine. Cover and simmer over low heat for 45 minutes until the beef is ready.
Pour in the cream.
Salt, pepper and if the tomato paste is acidic, add a little sugar
Cook for more 10 minutesuntil the sauce is thick enough.
Step 5: serve classic beef stroganoff with mushrooms.
Serve beef stroganoff with bread and pickled or pickled cucumbers.
