Ingredients for Making a Sandwich with Baked Vegetables
- Ciabatta 4 slices
- Margarine or butter 40 grams
- Pesto (red) 1 tablespoon
- Bulgarian red pepper 1 piece
- Eggplant 1 piece
- Zucchini or zucchini 1 piece
- Red onion 1 piece
- Fresh basil 1 piece
- Garlic 2 pieces
- Arugula 50 grams
- Capers 2 tablespoons
- Olive oil 3 tablespoons
- Hot paprika

Baking tray, oven, kitchen knife, cutting board.
Step 1: chop the vegetables.
Cut the capers very finely, cut the basil into thin strips.
Wash and dry the arugula with towels.
Wash the vegetables, dry and cut into very thin circles.
Step 2: bake vegetables.
Fold onion, zucchini, pepper and eggplant on a baking sheet, pepper and pour olive oil. Spread the circles evenly and bake in preheated until 200 degrees oven for 10-15 minutes or until golden brown.
Step 3: mix the vegetables with pesto.
When the vegetables are baked, mix them with basil, red pesto, capers and chopped cloves of garlic. Try it and add more salt if you think it is necessary. For my taste, salt is not needed here at all.
Step 4: add the baked vegetables to the bread.
Slices ciabatta with margarine. Spread arugula on them, and then baked vegetables. Serve warm.
Step 5: serve a sandwich with baked vegetables.
Sandwiches with baked vegetables are much healthier and tastier than others. The vegetables here are very fragrant and tasty, especially if you baked them well. Of course, you can supplement the set of vegetables or remove something, guided by your taste.
