Kebabs with zucchini

Ingredients for cooking chicken skewers with zucchini

  1. Chicken fillet 2 pieces
  2. Zucchini 2 small or 1 large
  3. 2 cloves of garlic
  4. Ketchup 3 tablespoons
  5. Mustard 3 tablespoons
  6. Basil 1/2 beam
  7. Arugula or other greens to serve

Wooden skewers, grill, kitchen knife, plate, cutting board, knife for cutting vegetables.


Step 1: pickle the chicken.

Wash the chicken fillet, dry and cut into portions.
Put the fillet slices in a plate, add ketchup, chopped basil and grated garlic, as well as salt, pepper, curry and mustard. Mix everything properly so that all the chicken pieces are covered with marinade sauce.

Step 2: chop the zucchini.

Rinse and clean the zucchini as desired. Then, using a special knife, cut them into thin longitudinal stripes, as shown in the photo.
Large zucchini just need to be cut in half, and then cut into thin “ribbons”.

Step 3: fry chicken skewers with zucchini.

On the wooden skewers, put the tip of a slice of zucchini, then pass a piece of chicken, wrap it with zucchini and plant the next piece of meat. Continue this way to the top of the skewer. Then salt the chicken-free parts of the zucchini, pepper, grease everything with olive oil and send to a well-heated grill.
Fry kebabs, often turning, until golden brown on all sides. In time it's about 10 minutes.

- Before cooking, wooden skewers need to be soaked in cool water for 30 minutes or 1 hour.
