We clean and then wash the vegetables. We cut them to everyone's liking, I cut the onion and the small garlic, the celery and the bell pepper into cubes. We also cut the bacon into suitable strips. In a large pan in which we heat the oil, put the slices of bacon and keep them for 1-2 minutes until they brown a little, taking care to turn them on one side and on the other. Remove the slices of browned bacon, place them on a plate and in the same oil, first put the onion and celery, then the bell pepper, garlic and mini-carrots. Season with salt and pepper and leave on the fire until the vegetables soften, then add a cup of water, bay leaf and simmer for about 10 minutes.

In the meantime, we take care of the meatballs. We put the meat through the mincer and with it the onion, garlic and greens. At the end we put the bread slices through the mincer. Mix everything well, season to taste with salt and pepper, add the egg, a little water and mix again. We "make" balls, put them in flour and then fry them in hot oil.

Remove the ready-made meatballs on a plate and when they are ready, add them all to the vegetable pan. We also add tomato paste and, if necessary, water (the liquid in the pan must cover the meatballs). Season to taste with salt and pepper and bake for about 15-20 minutes.

Serve hot, seasoned with some greens.

Ingredients for 4-6 servings of lentil stew

  • a small white onion
  • 3 cloves garlic
  • ½ from a leek thread
  • 1 celery stalk
  • 2 carrots

  • 100ml red wine
  • a jar of Deluxe pasta sauce
  • 2 canned Freshona lentils
  • 1 teaspoon dried basil
  • 1 teaspoon dried oregano

First we prepare the ingredients - we cut the vegetables into small pieces: onions, leeks, carrots, celery. We pass the garlic through the press, drain the lentils and wash it in cold water, in 2-3 waters.

In a large saucepan, heat the olive oil. Heat the onion and garlic until the onion becomes glassy. Add carrots, leeks, celery. Calm for 1-2 minutes.

Meanwhile, clean the mushrooms and cut them into cubes. We put them over vegetables. We heat them for 2-3 minutes.

Extinguish everything with wine, leave on the fire for 1-2 minutes on high heat.

Add the lentils and tomato sauce. Mix very well, season to taste with salt, pepper and herbs. We also add 200ml of water.

Let the lentil stew boil over medium to low heat, with a lid, for 30 minutes or until the vegetables are cooked.

The truth is that you have to do a lot, because we remember how quickly the meatballs ran out when my mother made them at the table with the family! We always asked her to make us more meatballs so we could enjoy more. Here's a good recipe for meatballs:

1. The preparation is very simple: the first 8 ingredients on the list above are all placed in a large bowl, they are the ones needed for the composition of the meatballs. That is, all the ingredients, except flour or breadcrumbs for rolling the meatballs, oil and the optional ones, if you do not want to add them.

A clarification: if you want, you can cook the onion for a few minutes in a saucepan with 1 teaspoon of oil. To tell you the truth, for years I have given up doing this. The meatballs come out very good with raw onions, provided they are finely chopped.

As you can see in the picture below, I added paprika, without which there is almost no food in my area, nutmeg, whose scent we adore and a drop of dried thyme. But, I repeat, it is everyone's choice whether or not to put these spices in the composition for meatballs.

What kind of meat do we use for meatballs?

As for the meat used, this time I used pork leg, which I chopped at home. You can also use beef mixed with fatter pork. You can also use chicken (thighs), for a lighter caloric variant. The idea is that it is good to use a meat that is suitable for fat, not very lean. We don't want to get the meatballs dry, but we don't want the fat to flow from them during cooking.

2. Knead all the ingredients in the bowl well and get the meatball composition. Tip: to perfectly appreciate the seasoning, fry a small amount of composition (as much as a hazelnut) and taste it. If, after tasting this tiny meatball, you think you need more salt and pepper, adjust the taste as you like.

Modeling meatballs

1. With wet hands, break small lumps (as equal as possible) from the well-mixed meatball composition. We roll them between the palms, shaping them into balls. The size I give is about the size of a ping pong ball (4-5 cm in diameter). Depending on your preference, you can make them smaller or larger. You can also flatten them slightly.

2. We prepare the flour or breadcrumbs to be at hand. We roll the meatballs shaped with flour or breadcrumbs.

3. This is what modeled meatballs look like. They are on the left before and on the right after they have been rolled in flour and then shaken off the excess flour. Flour or breadcrumbs will help the meatballs quickly form a crust on the surface, keeping them juicy inside.

How to fry or bake meatballs

1. The main advantage of baked meatballs is that you will eliminate 74 calories / serving. At 100 grams of meatballs, the recommended portion, they will have 130 calories.

So, if you want to bake these meatballs in the oven, make sure you use a fatty meat for the composition of the meatballs. That's so you don't end up with hard, dry balls. Once you have shaped them as shown above, place them in an oven tray lined with baking paper. Leave 3-4 cm. between them, so that the hot air in the oven can circulate. After sprinkling them with 1-2 tablespoons of oil, bake the meatballs in the preheated oven at 210 ° C static or 200 ° C ventilated for 20 minutes, until golden brown.

2. I think you've all already realized that I prefer to fry meatballs. Prepared this way, they taste better and have a crispier crust. The interior always remains juicy and fragile. In a pan or saucepan well heated over medium-high heat, pour vegetable oil about two fingers and heat well. The ideal temperature for frying is around 170-180 ° C. In the absence of a special thermometer, you can approximate if the oil is well heated by putting the tail of a wooden spoon in the pan. If playful air bubbles form around it immediately, you can also fry the meatballs, one at a time, without squeezing them in the pan.

3. If the oil is hot, it will sizzle when we add the meatballs. They will cook quickly, practically in just 3-4 minutes, during which time we will turn them on all sides with a fork.

For a while I discovered the wonderful Turkish cuisine and I can say that I fell in love with it. Besides the fact that the recipes have a lot of vegetables, I find it absolutely wonderful that I don't cook pork because I'm not a big fan of it.

The recipe below I discovered on a group of recipes of Turkish origin, called Patates kebabı and as soon as I saved it I tried it. It is very good, and the combination of meat and vegetables is a success. The original recipe was with chicken or turkey but I used beef, you should know that the meatballs did not come out dry at all, they were juicy and soft even if I used beef. You can even use a combination of beef and chicken, that's fine.

Basically, a wreath of meatballs, eggplant slices is formed and peppers, garlic and tomatoes are placed in the middle. Add more tomato sauce and a few pieces of butter. The only thing I want you to keep in mind is the size of the meatballs, I didn't know how big they should be and there are a few left that I put in the middle.

This dish can be served with rice or bulgur, we served it with rice.

Meatballs with vegetables

  • 500g minced beef, chicken or turkey
  • 2 tablespoons breadcrumbs

  • 1 green pepper

  • 2 tomatoes
  • 2 cloves of garlic
  • 200 ml mashed tomatoes
  • about 100g butter

For a start, peel the eggplant and cut it into not very thin slices, sprinkle with salt and let it sit for a while. I advise you to choose a long and thin eggplant as a shape, but if you can't find it, then the slices must be cut in half (that's how I did it).

Until the eggplant stays, prepare the meatballs, mix the meat with the eggs, the breadcrumbs and add salt and pepper. We form larger meatballs that we place on a plate.

Preheat the oven to 180 degrees Celsius.

Peel the potatoes and cut them into thicker slices.

We cut the peppers into cubes as well as the tomatoes. Peel a squash, grate it and slice it.

In a round tray we put a little oil and form the preparation: on the edge we put a meatball, a slice of potato, a slice of eggplant, and so on until we form a crown. As I wrote above, I made the meatballs smaller and there were a few left that I put in the middle.

In the middle we put peppers, tomatoes and garlic. Pour the mashed tomatoes on top and from place to place put the pieces of butter.

We cover the tray with an aluminum foil and put the tray in the oven for an hour and a quarter (because we are talking about Romanian beef). If you use chicken, 40 minutes is enough.

After 1.15 hours we take the foil and let it fry nicely on top for another 20 minutes.

Serve the food with rice or bulgur.
