- 4-6 sprigs of fresh rosemary
- a lemon, cut into slices
- 4 thick cod fillets <175 gr each)
- mix of vegetables of your choice for garnish
Garlic sauce ingredients:
- 2 cloves of garlic
- 1/4 teaspoon saffron
- an egg yolk
- 200 ml of olive oil
- 2 tablespoons lemon juice
- 2 tablespoons olive oil
- 4 cloves garlic, finely chop
- a finely chopped onion
- a tablespoon of fresh, chopped rosemary
- 2 tablespoons fresh, chopped thyme
Method of preparation:
Turn on the oven about 1 minute before you start cooking. Crush the garlic together with the saffron and a pinch of salt and rub until a paste is obtained.
Using a blender or mixer, mix the garlic paste with the yolk after 30 seconds and start pouring the olive oil into a thin thread until you get a thick mayonnaise. Add the lemon juice, cover and place in the fridge.
To prepare the marinade, mix the olive oil, garlic, red onion, rosemary and thyme and let them soak for about a minute.
Place the rosemary sprigs and lemon slices in a pan greased with a little oil, then place the cod fillets on top, skin side up. Pour over the marinade and leave everything in the fridge for 15-20 minutes, then put the fish in the oven where you will leave it for another 20 minutes.
Remove the pan from the oven, let the fish cool for a few minutes, then serve it with mayonnaise and vegetables.

The beer panada is always successful. It is fluffy, rosy and very tasty.
INGREDIENTS (for 4 servings):
-a paprika powder
-a cup of flour + 2 tablespoons - for rolling
-100 g of oil - for frying.
METHOD OF PREPARATION:
1.Wash, dry and cut the code into long strips.
2. Sprinkle them with a pinch of salt and a pinch of hot pepper.
3.Put the flour in a bowl. Add the remaining salt and egg.
4. Add the beer and mix the panada very well with the whisk.
5. Put the pan on a moderate heat. Pour the oil into it.
6. Check that the oil is hot, adding a few drops of panada in it. As only these will brown, you can start frying the fish.
7.Put 2 tablespoons of flour in a separate bowl.
8. Roll each strip of fish in flour - on all sides.
9.Then immerse it in the panada so that it is completely covered.
10. Remove the fish strips from the panada and hold them slightly above the bowl so that the excess dough drains from them.
11. Dip the fish strips in the hot oil.
12. Fry them for 2-3 minutes on each side.
13. Fish is prepared very quickly. Therefore, determine the degree of preparation of the dish after browning the panada.
14. Remove the fish from the oil with a whisk and place it on paper towels to remove excess oil.
15. Serve the cod strips as the main dish or as a snack for beer, placing them in a lump on a plate.
Code fried in tomato sauce
Pour the garlic and green onion into a vegetable oil.
It is good to lie down and leave for 2-3 minutes. Add the basil.
Add the carrots to the sauce. Salt and pepper to taste. Cook for another 3-5 minutes.
Cut the fish into small pieces.
Cook over low heat for 15 minutes. Put on a plate and decorate with parsley slits.
Fish and Chips, nothing more than fried fillets, served with french fries, is a traditional British food, served as in the picture, in a paper cone.

Remove the fish from the plate, place the vegetables next to it, sprinkle with a little freshly ground pepper and serve with hot polenta, garlic sauce, horseradish sauce or whatever else you want. We ate beetroot and horseradish salad.
It is a light, fast, healthy food that goes great for lunch or dinner, even if you have guests. My favorite is pike and pikeperch, but if I don't, I haven't seen it here in Italy, I make it from ocean fish.
