I boiled the mixture of bulgur and quinoa in lightly salted water for 10 minutes, drained it in a sieve, then mixed it with the vegetables.

Muffins with pumpkin and ham cubes

Muffins with pumpkin and ham cubes an appetizer and not only, simple, with few ingredients and available to anyone. They are served both in the morning and in the evening, next to a cup of milk.

Ingredient: 10 pcs.
300 g of zucchini
70-80 g of ham (sausages, bacon & # 8230)
2 eggs
2 tablespoons olive oil
80 g flour
1 teaspoon baking powder
salt
ground white pepper

Preparation Muffins with pumpkin and ham:
Wash the pumpkin and peel it on a large grater. Add a teaspoon of salt, mix and leave for 10 minutes to leave the water. Before use, drain well into a gauze.

The other main ingredient is pork ham cut into 1 cm cubes. I used a peasant semi-smoked pork sausage that I had in the fridge, and it went very well.

In a bowl, beat the two eggs in the mixer until they double in volume. Incorporate the dry ingredient: flour, baking powder.
When it is homogenous, add it to the grated and drained pumpkin very well. Season with salt and white pepper to taste.

In the muffin tray, grease 10 forms with oil and with a spoon put the composition alternating with the ham / sausage cubes. I chose not to put them directly in the whole composition because it would have been harder to divide them equally into shapes.

Fluffy and tender muffins with zucchini and cheese for snacks or picnics. The recipe is simple, but extraordinarily good!

INGREDIENT:

-1 teaspoon of baking powder

-salt and spices - to taste.

METHOD OF PREPARATION:

1. Pass the zucchini through a grater, add eggs, salt and spices. Stir until the composition is homogeneous.

2.Add the diced peppers and grated cheese. Stir the ingredients again.

3.Combine the sifted flour with baking powder and gradually incorporate the mixture into the pumpkin composition.

4. Transfer the dough into silicone muffin tins, filling only 2/3 of them.

5. Bake the muffins for about 25-30 minutes in the preheated oven to 180 ° C. Take the toothpick test.

The muffins have such an appetizing aroma, you can barely resist until they cool down a bit! They are just as tasty after cooling. Serve them for breakfast or as a snack.


  • 250 g Quinoa
  • 0.5 piece Red pumpkin kuri

  • 1 sachet feta cheese
  • 1 Baby spinach, one hand
  • 0.5 teaspoon Granulated garlic

Cut the zucchini and onion into small pieces and fry them in a pan with a little olive oil. Season with a little Kotányi salt, pepper and 1/2 tablespoon of organic granulated garlic and mix well.

Towards the end, add 2 coats of baby spinach and mix.

Prepare the quinoa according to the instructions on the package.

Remove the seeds from the pomegranate and cut the feta cheese into thin slices.

Mix the zucchini with quinoa and other vegetables and garnish with pomegranate seeds and feta cheese.

Tagliatelle with ham, zucchini and tomatoes

Prepare the ingredients before we start cooking. Cut the ham into small cubes, cut the zucchini in half, remove the seeds with a spoon, then cut them to the same size with pressed ham. Cut the tomatoes into 4, remove the pulp and cut into cubes. size as the other ingredients.

Put the pasta to boil in salted water and start preparing the sauce.

Heat butter in a pan and cook the onion. Immediately after the onion is hardened, add the ham and zucchini, mix well, put a pinch of water to boil the pasta and add the tomatoes.

Add the almost cooked pasta and start to cook in the pan, this way the ingredients are mixed, and the pasta starch helps us to get a creamy sauce.

  • 400 gr of Telemea cheese, salted
  • 400 gr Greek yogurt
  • 100 ml oil
  • 1 medium-sized zucchini
  • salt and pepper to taste
  • 1 bunch of green dill
  • 1 bunch of green onions
  • a little dried basil
  • 450-500 gr flour
  • 5 gr baking powder
  • a little butter, to grease the pan, or oil

Method of preparation

We prepare the dough for waffles and pancakes with cheese and zucchini.

Mix in a bowl, the eggs with the oil, the crushed cheese and the yogurt. Add the baking powder to the yogurt.

Wash the zucchini well and put it on the large grater. We only peel it if it's not raw.

Add the grated zucchini, then the finely chopped green onion leaves and the finely chopped dill. We do not put the white part of the onion, only the leaves.

Homogenize the composition and add a little dried basil, or green, if we have.

At the end we add the flour. We add enough flour to make the composition much thicker than the classic pancakes.

We heat the baking machines (the waffle and panini maker) and put a composition polish in each compartment.

For the panini, I put 2 polonies from the composition, but separately, to bake two pancakes.
