Chickpea paste

The chickpeas are washed and soaked in the evening, then in the morning we boil it together with a whole onion, salt and bay leaf and let it simmer for approx. 4 hours. After it is well cooked, we strain it, leaving the water that has boiled aside to add at the end if necessary, because the chickpeas are a bit dry. Then I mixed it with the onion and pepper that I had fried in the meantime.

We fry the sesame seeds a little in a tray not much because they are bitter and then we put them through the sugar machine. Everything comes well mixed together, at the end we add the juice from a lemon, thyme and garlic given by the press. Season with salt and pepper and season with green parsley.

At the end, if you think it is too dry, add it from the water in which it boiled.
