Bake the pancakes on a flat plate and cover with another plate until all the pancakes are done.

For the cream cheese: mix the cottage cheese with the powdered sugar, the yolks, the vanilla sugar, the essences, the lemon peel, the raisins, until a consistent cream is obtained.

The pancakes are filled with cream cheese, wrapped like sarmales, then put in a heat-resistant dish, I used silicone mold, so there was no need to grease the form;).

Mix the yolks with the liquid cream until smooth, then pour over the stuffed pancakes. Then bake in the preheated oven for approx. 10 minutes at 180 degrees.

Banat pancakes

The composition of Banat pancakes is prepared from 500 grams of sweet cottage cheese mixed well with 100 grams of sugar, 1 egg, 3 tablespoons of cream, 50 grams of raisins and grated peel of a lemon and an orange. It must result in a homogeneous and fragrant composition with which we grease each pancake. We will roll the pancakes like sarmale and put them in a tray lined with a little butter. Next is the preparation of the vanilla sauce, specific for Banat pancakes and which requires 5 egg yolks mixed with 2 sachets of vanilla sugar, 5 tablespoons of caster sugar and 2 tablespoons of cream. Pour the sauce over the pancakes and put the tray in the oven over medium heat, during which time we prepare a classic meringue of 5 beaten egg whites with 100 grams of sugar. Everyone has been eating more and more imported and sophisticated pancake recipes lately.

Today we offer you an absolutely delicious pancake recipe, which is not as publicized as it deserves: Banat pancakes. If you have any extra pancake sheets left over the next day and you don't know what to do with them… we tell you: make them bananas! So:

2 vials of vanilla essence

200 g sweet cooking cream

Grease a pan with butter. Preheat the oven.

In a medium bowl, mix the pancake filling - cottage cheese with egg, sugar, raisins and essences.

Separate the other 4 necessary eggs - because for the vanilla sauce you will use the yolks, and for the meringue the egg whites. Mix the yolks with the cream, caster sugar and vanilla sugar with the mixer. Beat the egg whites - also with the mixer - until they harden and then add the remaining sugar and salt. Ready and meringue!

Fill the pancakes with the filling and fold them one by one, like sarmale. Place them in the bowl greased with butter. Pour the vanilla cream on top. Bake for 10 minutes or until you see the sauce start to thicken. Remove the bowl and pour over the meringue composition. Bake for another 10 minutes or until the meringue crust begins to brown.

Mix the dough well with a whisk or a mixer to make sure that no lumps form at all in the dough. Mineral water will be added one at a time to adjust the consistency of the dough, depending on how thick you want it to be.

How to bake traditional pancakes

Heat the pan well and grease its surface with grease. Take the hot pan in your left hand and, with the help of a polish, pour the composition into the pan with your right hand, rotating the pan at the same time, so that the dough is evenly arranged in the pan. The dough will have to occupy the entire surface of the pan.

Then place the pan on top of the flame, and when the edges of the pancake have taken on a golden hue, it's time to turn the pancake over. Either use a wooden spatula, or you can throw the pancake up, if you have the skill. After turning the pancake, bake it a little on the other side, and when it shows signs of browning, you can place it on a plate. Repeat the movement until you finish all the dough and place the pancakes on top of each other, on a plate, as you prepare them.
