The Fanta cake obviously derives its name from the sour juice of the same name, especially inspired by the intense yellow color of the icing or rather of the jelly on top. I, for one, preferred to use freshly squeezed orange juice and, as you can see, the color and appearance of the cake are perfect, I'm not even talking about taste. The cream is light and very tasty. Most of the variants of the recipe that circulate on the internet are based cow cheese mixed with butter, but I also preferred to add mascarpone, for a better taste and a frothy and creamy texture.

As a last observation, the Fanta cake can be enjoyed the day after preparation. I noticed, however, that it is even better in a few days. The cake has time to settle, the countertop softens and takes on the flavor of the cream cheese, in other words, the whole cake becomes tastier. First, prepare the countertop. Put the eggs in a bowl, add salt, sugar and mix everything well until the eggs triple in volume. After the composition has increased, add the 40 grams of cocoa and mix again, but this time at low speed.

After mixing, add the rest of the ingredients and incorporate them manually. Add the oil, a teaspoon of orange essence and mix gently, then begin to incorporate the flour, stirring constantly.

Pour all the composition into a pan, level well and put everything in the preheated oven at 180 degrees for 20 minutes. When the countertop is ready, take it out of the oven and let it cool.

How to prepare cream

Put the butter in a bowl, add the powdered sugar and the vanilla sugar and mix everything well until the butter looks like a cream. Put the orange juice in a saucepan over low heat, add the cornstarch, mix everything well, then add the sugar. Stir continuously in the composition until you notice that the cream begins to thicken. Take the pan off the heat and cover it with plastic wrap and leave it at room temperature.
